Easy Kid-Approved Fluffernutter Rollups

 

I haven’t met a person that doesn’t love fluffernutters. If you’ve never had a fluffernutter sandwich OR fluffernutter rollups, then let me introduce you! There’s no need to be strangers, anymore!

Friends, meet peanut butter and marshmallow-y fluffy goodness. There. Now you’ve been introduced. I’m sure you’ll become best friends!

When I was little, it was something I made all the time. Peanut buttery fluffiness. Pure bliss, in my opinion! Paired with a ginormous glass of milk. Mmm’hmmmm. Since my kiddo lives and breathes anything peanut butter, we have a lot of peanut butter recipes on the blog! These are perfect for him as a quick snack or to pack in his school lunch. Best part? They’re SO easy to make!

Fluffernutter Rollups Ingredients:

2 pieces of white bread
1/8 cup of peanut butter
1/8 cup of marshmallow fluff

 

Instructions:

  1. Begin by rolling the bread flat with a rolling pin or something smooth. Roll it out pretty thin.
  2. Next, spread a thin layer of peanut butter.
  3. Then, spread a thin layer of marshmallow fluff on top.
  4. Roll up tight, and cut into small bite size pieces!
  5. Store in airtight containers so they don’t get stale.

Alright, now seriously…how easy is that?! It’s a game-changer in our kitchen. The kiddo loves when we make these and then naturally, momma has to have her ginormous and thick fluffernutter all to herself. With that cold glass of milk. Shhhh!!! If I keep it a secret, I don’t have to count those calories. 🙂

Loaded Cheesy Fries Recipe

Fries Hero We’re always looking for something to eat around here. I love to throw together a few ingredients that can make a filling dinner! I need recipes that are easy to prepare and taste great. That’s why I love Campbell’s Sauces. They make recipes even quicker and easier! When I can create a recipe using Campbell’s® Sauces, one of Campbell’s new products, I can spend less time in the kitchen and more time with my family.

 

12185664_1065813953442396_1465260468_o A great recipe that can be used as a snack, side item, or even a party food is Loaded Cheesy Fries. My husband loves to eat this while watching football games. I am able to prepare the recipe so much faster when I can use Cheesy Broccoli Chicken Oven Sauce.

Loaded Cheesy Fries

  • 1 Package Frozen Steak Fries
  • 1 Package of Campbell’s® Cheesy Broccoli Chicken Oven Sauce
  • Sour Cream
  • Bacon Bits
  • Green Onions
  • Salt and Pepper to taste

Instructions:

  1. Preheat the oven and bake the steak fries according to the package directions. When the fries are almost done baking, add the Campbell’s® Cheesy Broccoli Chicken Oven Sauce to a small sauce pan and heat.
  2. Put the steak fries on a serving platter and layer the ingredients: Cheesy Broccoli Sauce, sour cream, bacon bits, green onions, salt and pepper.
  3. Serve and enjoy!

So, we’re on fall break which means my main little man is home from school. YAY! No alarm clocks blaring at 6am this week! It’s gonna be a busy week. We’re planning a trip to the pumpkin farm with my niece and her boys to pick out some pumpkins and momma may get her a pot of mums….or 2 or 3. But who’s counting.

We’ve just got lots of fun things planned. I am also trying to stick to my budget and not make any impromtu trips through the drive-thru so we’re packing snacks this week while we’re day trippin’. Those trips through the drive-thru are at minimum $7 a whack, so a few of those in a week’s time while we’re out and about isn’t my intention.

Since about the ONLY thing my child will eat right now is peanut butter, I stocked up on a few of the new Jif To Go Dippers. These things are wayyyyy cool and super duper handy for taking in the car for him, and me! These convenient little cups are filled with pretzels and either Jif’s Creamy Peanut Butter OR my new fave…the Chocolate Silk Peanut Butter Spread. Uhh, yum!

I love it because they fit perfectly in my purse, totebag and in his backpack! So much better than a squished peanut butter sandwich in a plastic sandwich bag, right? Plus, I love the crunchy pretzels. It’s just a nice little treat! If you’ve been struggling with finding new ideas for quick on-the-go snacks…..pick up some of these on your next trip to the store. We found these at Walmart, right up next to the peanut butter but they’re available at most any other grocery store too – and they’re just over $1. Not too shabby!

Pumpkin Pie Puppy Chow

I stinking love this stuff. Puppy chow or muddy buddies…whatever YOU call it. I can eat my weight in this stuff. Before I know it, an entire bowl is just gone. I’m like, “Where the heck did all the puppy chow go?!” ……and then my husband is all like “Uhhh — you ate it all!”. Since fall is my most favorite time of year, what better than a yummy Pumpkin Pie Puppy Chow recipe!!! Okay, on to this pumpkin pie flavored delicious-ness!! Stop licking your screen, and just go get the stuff and make this. Like now. YES!! Right now!! Make it now, and you can thank me later. The printable recipe is down below, just scroll down. Print it off and stick it back in your recipe box!

 

Pumpkin Pie Puppy Chow Ingredients:
8 cup Chex Cereal
12 oz Pumpkin Spice Candy Melts or White Candy Melts (Wilton or store brand)
*candy melts melt SO much easier than the chips or blocks 
2 cup Powdered Sugar
3 tsp Pumpkin Spice
1 cup Fall Color M&M’s or other Fall favorite candy

 

 

 

DIRECTIONS
Melt candy melts by microwaving 30 seconds then stirring and repeating until melted. Stir in the 3 tsp. of pumpkin spice to the melted candy melts mixture.

Next comes the fun part. Pour cereal into a large mixing bowl or onto a large tray. Pour the melted candy melts over the cereal and using a spatula or spoon, gently fold and combine the mixture into the cereal until it’s thoroughly covered.

Put half of the powdered sugar mixture into 1 gallon size ziploc bag, and the rest in a 2nd gallon size ziploc bag.

Spoon half the cereal mixture into each bag, and shake shake shake shake shake!!! Shake until all of the cereal is coated in white sugary goodness. If there are any pieces that are clumped together, try to separate and then shake some more. Do the same thing with the 2nd bag.

After the cereal is all coated, pour in a single layer onto a large baking sheet lined with parchment or wax paper. Allow to dry and then add M&M’s before putting in airtight containers or your serving bowls.

Yummy and Easy Cookie Cutter Sandwiches for your Picky Eater

M’kay, so my little man is a picky eater but he isn’t too picky about bread, thank goodness. Having texture issues and being a picky eater, we have many struggles in the kitchen, but thank GOD – he don’t “make waves” about bread. I’m actually the one who makes the waves around here when it comes to bread.

I don’t like chewy, grainy, stinky bread. I like soft bread that doesn’t have an overwhelming wheat-y flavor or scent. Know what I mean? My mom always bought Roman Meal bread when I was growing up and that’s the whole grain bread I like. It’s soft! It’s not like some others. You know the ones – where the more you chew, the bigger it gets. Bleck!

Now, because little man IS a picky eater, I have to play around with his sandwiches. I made these fun cookie cutter sandwiches with peanut butter and jelly, and then some with just plain cheese and mayo for him. Nothing super frilly and fancy – but these turned out so cute! You could totally make ANY kind of cookie cutter sandwich depending on the occasion or what your kiddos like! I just used what we had on hand.

If your family or kids are picky about whole grain bread, you have to try the Roman Meal bread!

  • whole grains help with digestion and weight management.
  • whole grains may reduce the risk of heart disease. (that was a biggie I didn’t know!)
  • whole grain fact, (courtesy of my dad!). He swears that enriched breads give him heartburn or make his acid reflux worse. He won’t touch the stuff.

Little man’s school is celebrating Dr. Seuss week this week at school. I thought it would be fun to make a few different Dr. Seuss Cat in the Hat snacks to celebrate at home too. We already made these Cat in the Hat Strawberry and Marshmallow Kabobs AND these yummy Dr. Seuss Cat in the Hat Waffles!

It’s all Dr. Seuss up in here!

These kabobs are so easy and they’re also a super healthy snack! I wanted to share how we made them in case you’re looking for an easy way to celebrate Dr. Seuss at home (or school) too.

Cat in the Hat Kabobs

What you’ll need for the Cat in the Hat Kabobs:

  • Skewers
  • Grape Tomatoes
  • Mozzarella Cheese Cubes (or sliced sticks)
  • Ranch Dressing (for dipping)
  • *Another fun adult option would be pesto drizzled onto the kabobs vs. dipping in ranch! We love pesto too!

All you do is layer the tomatoes and cheese cubes onto the skewer so that it resembles the Cat in the Hat’s hat! Told you it was super simple.

What are some fun ways you’re celebrating Dr. Seuss Week? Eli gets to go to school in his favorite pajamas one day this week. I’m not so sure how I feel about that, but we’re going with it…LOL!!
