Hidden Pot O’ Gold Pudding Parfait
St. Patrick’s Day seems to be the one holiday that we don’t always go all out for. I had some pistachio pudding up in the cabinet, and I thought….ahhh, what the heck. We’ll make a pudding parfait. Using what I already had on hand, I thought it would be SUPER cute to put pineapple at the bottom (to resemble the pot of gold). The cereal is of course, the rainbow. Who knew throwing a few simple things together would be so pretty, and tasty too. The kiddo loved them.
I recommend making your pudding and refrigerating until it’s set before beginning to put these parfaits together. You’ll want to serve them AS soon as they’re made so the cereal doesn’t get soggy. I’d also recommend smaller mason jars for smaller portions (for young kids).
Ingredients:
- Pistachio instant pudding mix
- milk (for the pudding)
- Fruit Loops or another colorful cereal
- Pineapple chunks
- RediWhip or whipped topping
Instructions:
- Mix pudding according to directions and refrigerate until set.
- Drain pineapple chunks and add to the bottom of the jars.
- Next, layer cereal on top of the pineapple.
- Then pipe or spoon in a thick layer of the pudding.
- Finally, top each jar with a nice helping of whipped topping.
- Enjoy right away!
