Thin Mint Ice Cream Sandwiches

Thin Mint Ice Cream Sandwiches

It’s that time of year! Girl Scout Cookie time has arrived and I wanted to send out this awesome post again, so that all of YOU can put these Thin Mint Ice Cream Sandwiches together!

These were so good and I couldn’t stop eating them. They’re pretty dang addicting. Are you ready for this super difficult Thin Mint Ice Cream Sandwiches recipe? Get ready, and take lots of notes. Juuuuuuust kidding. It’s really easier than peasy!

What You’ll Need:

  • Thin Mints Cookies (or any of these mint cookies will work if you don’t have Girl Scout Cookies on hand.)
  • Mint Chocolate Chip Ice Cream
  • Cookie or Ice Cream Scoop

Thin MInt Ice Cream Sandwiches(The ice cream started to get soft, so I ended up sticking it back in the freezer before finishing the rest.)

Instructions:

  1. Use a scoop to plop one dollop of ice cream on top of one cookie. Smush ice cream down with another cookie.
  2. Eat.
  3. Repeat steps 1 and 2.

See how simple that is? Plop, smush, eat, repeat! Plop, smush, eat, repeat!

Thin Mint Ice Cream Sandwiches

Okay, now in all honesty…there are a few things I want to mention. Just to save you some time.

Before you begin to assemble these Thin Mint ice cream sandwiches, let the ice cream thaw JUST a little bit. Not too much. You want it thawed just enough that you can easily scoop it out. You still want the ice cream a bit firm, but easy to scoop.

When you smush the second cookie on top of the ice cream, just smush it till the ice cream starts to barely seep out the side and then stop! You don’t want to squeeze it so much that the ice cream starts coming out all the way. If it IS doing that too easily, you may need to stick your ice cream back in the freezer for a bit to stiffen back up.

After assembling them, place back in the freezer on a wax paper lined baking sheet, tray, or plate until it’s time to serve them. They’re actually too hard to eat if the ice cream is soft so you want them nice and frozen!

Easy Toasted Almond and Vanilla Arancini Recipe with Breyers Natural Vanilla Ice Cream

September 4, 2015 by Jenni 722 Comments

This post brought to you by Breyers. The content and opinions expressed below are that of Sweet Pennies From Heaven.

You'll love this grown up yummy ice cream treat called Toasted Almond and Vanilla Arancini. We used Breyer's Natural Vanilla ice cream to make it and it was DELICIOUS!

Toasted Almond and Vanilla Arancini (a yummy ice cream treat!)

I scream, you scream…..we all scream for ice cream! I remember when my love affair for ice cream began. I was a dirty-nosed 5 or 6 year old – playing outside when I first heard this pretty music in the distance. All of a sudden, all the neighborhood kids run into their homes screaming…

“MOM, THE ICE CREAM TRUCK IS COMING! I NEED SOME MONEY!!!”

Needless to say, I had had ice cream plenty of times prior to this ice cream truck experience, but it’s a whole heck of a lot different when you have such an array of yummy frozen treats inside of a pretty and musical truck. It was the most beautiful thing, for a kid…almost magical.

My mom gave me money too, and I bought some kind of ice cream in a waffle cone with nuts on top. I’ve always liked “grown up people” kinds of ice cream, even as a kid. From then on, I always listened for the ice cream truck and when I’d hear it – I’d run and scream into the house like a wild banshee from then on! Just like all the other kids!

Ahhh, sweet childhood memories. I still live in the same house that I grew up in. Sadly, the ice cream truck doesn’t make it’s way down our road anymore {insert really sad face here}. However, I’ve kind of recreated some awesome-ness that reminds me of an adult version of my first ever ice cream truck experience.

You'll love this grown up yummy ice cream treat called Toasted Almond and Vanilla Arancini. We used Breyer's Natural Vanilla ice cream to make it and it was DELICIOUS! This toasted almond and vanilla arancini recipe is SO crazy easy and SO delicious! My favorite ice cream brand, Breyers, has partnered with Chef Antonia Lafaso. I’ve chosen one of Chef Antonia’s frozen recipes to share with you – using Breyers Natural Vanilla ice cream.

You'll love this grown up yummy ice cream treat called Toasted Almond and Vanilla Arancini. We used Breyer's Natural Vanilla ice cream to make it and it was DELICIOUS! Breyers Natural Vanilla is the perfect base ingredient for your sweet recipes. Why? The biggest reason for me is because they only use super high quality ingredients like…

  • fresh cream
  • sugar
  • milk
  • sustainably farmed vanilla beans

What does that even mean?

You'll love this grown up yummy ice cream treat called Toasted Almond and Vanilla Arancini. We used Breyer's Natural Vanilla ice cream to make it and it was DELICIOUS! Umm. It means it’s made with fresh cream, sugar, milk and REAL vanilla beans, not just vanilla flavoring. I love it when I see beautiful black flecks of vanilla bean in my ice cream. Ohh, and another important thing I’d like to mention is that the milk and cream comes from cows NOT treated with artificial growth hormones**.

**Suppliers of other ingredients such as cookies, candies & sauces may not be able to make this pledge. The FDA states that no significant difference has been shown between dairy derived from rBST-treated and non-rBST-treated cows.

Did you know that Breyers Natural Vanilla is America’s No. 1 vanilla ice cream? There’s a reason why! It’s because of the reasons mentioned above, and NOW parents have plenty of reasons to feel good about keeping it stocked in their freezer. You can find Breyers in grocery stores, nationwide for around $3.99 – $5.99.
