Glazed Pumpkin Banana Bread + How to Combat Tummy Trouble this Holiday Season

Do the holidays just get ya? Right in the feels?! It does me too, and that’s why I’m sharing this yummy-licious glazed pumpkin banana bread recipe!

I stay “giddy” all through November and December. The music, the movies on Hallmark, the chilly air outside, and then there’s the FOOD. All. The. FOOD.

I consume more calories in November and December than I do all of the rest of the year combined. Not even kidding! But, don’t we all??!! I tend to get rumblies in my tumblies sometimes though, especially during the holidays, so thank goodness I have a few favorite digestive health relief products that I can depend on!

Thanksgiving is over and we’re gearing up for Christmas, however, we do still have a few weeks left. I’ve been wondering what in the world to do with my leftover canned pumpkin. And just FYI, no. I’m not sick and tired of pumpkin just yet! I also had some REALLY ripe bananas leftover, so…I made this delicious glazed Pumpkin Banana Bread!

Pumpkin Banana Bread Ingredients (makes 2 loaves)

  • 5 cups flour
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. ground cinnamon
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 3 really ripe bananas
  • 1 15 oz. can pure pumpkin
  • 1 stick softened butter
  • 3/4 cup sour cream
  • 1 1/2 tsp. vanilla extract

Glaze Ingredients:

  • 1 1/4 cups powdered sugar
  • 3 tablespoons milk
  • 1 tsp. of vanilla extract

Instructions:

  1. Preheat oven to 350 degrees.
  2. Grease 2 loaf pans.
  3. Combine flour, baking soda, salt, ground cinnamon.
  4. In a large mixing bowl, cream together the butter, sugar, and brown sugar. Then slowly add the pumpkin, banana, sour cream, and vanilla extract.
  5. Add the dry ingredients and mix slowly until completely combined.
  6. Pour the batter evenly, into the 2 greased loaf pans.
  7. Bake at 350, for 40-45 minutes or until toothpick inserted in the center is clean.
  8. Place loaf pans on a wire cooling rack. After they’ve cooled – it’s time to pour the heavenly glaze over the top!

 

Glaze Instructions:

  • In a small bowl, combine the powdered sugar, milk, and vanilla extract. Whisk until it’s creamy. You can add more milk to get the consistency you want.
  • After bread is completely cool, drizzle the glaze over each loaf.
  • Enjoy!

I know that the holidays are the time that we enjoy the best foods! Things that we don’t often get, and yummies that are slap full of calories, and other goodness! My belly usually doesn’t agree with all of that. Yours probably doesn’t either.

TAZO has partnered with New York Times Bestselling author and host Padma Lakshmi to celebrate the release of the new K-Cup® pods. Since tea and chai are huge parts of her family’s heritage, she’s developed some incredible recipes that pair perfectly with some yummy chai. You can find all of the recipes here.

I wanted to create a recipe that I could infuse with the chai flavors. One of my favorite recipes has always been tiramisu. So, chai tiramisu it is! And it’s SO good!

Ingredients:

  • 1 cup heavy whipping cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 8 oz. mascarpone cheese, softened or at room temp.
    (you can use 8 oz. of cream cheese if you can’t find mascarpone)
  • 8 oz. brewed and cooled TAZO® Chai Latte, reserve 1 tablespoon
  • 1 package of lady fingers, or vanilla wafers
  • ground cinnamon

 

Instructions:

In a mixing bowl, combine heavy whipping cream, sugar, and vanilla. Beat until stiff or hard peaks form.

Gently fold in the softened mascarpone cheese, and 1 tablespoon of cooled chai latte.

Dunk each lady finger or vanilla wafer (using vanilla wafers in my recipe because I can’t find lady fingers in stock anywhere) into the remaining chai latte, and layer evenly onto bottom of an 8″ square pan.  DO NOT let the lady fingers or wafers soak. Literally…just dunk straight in and straight out, and layer into the pan. If you let them soak too long, they’ll get too mushy.

After the bottom is layered with cookies, spread half of the mascarpone mixture on top and spread evenly.

Add another layer of dunked lady fingers or vanilla wafers on top.

Spread the last half of the mascarpone mixture on top.

 

Easy chai tiramisu recipe, with no eggs. You can use ladyfingers or vanilla wafers!

Sprinkle the top with ground cinnamon.

Refrigerate overnight or at least for 6-8 hours before serving.

Is there ever really a time when SMores aren’t in order? I realize that it’s a camp-fire-y treat, and I realize that it’s nearing the end of January. I really don’t care. HA! These SMores Bars “mayyyy” be the best thing I’ve ever put in my mouth.

Since I believe that S’mores never actually GO into retirement at any given time during the year, these happened. Please forgive me while I woo these bars in my kitchen. Woo them right smack dab into my mouth. And with a cold glass of milk to boot.

This is SUCH a simple dessert to make. You won’t believe how easy it is. These toasted Smores bars are perfect for anytime and I hope you and yours enjoy them as much as – uhh – “me and ours?” do! That made sense, right?!

I recreated this recipe from Shelly at Cookies and Cups! She uses homemade marshmallow fluff in her recipe. I totally cheated, and used store bought marshmallow cream which is good in a pinch – but I imagine that the homemade is SO much better!

You’ll need the following ingredients…just remember that you can use store bought marshmallow cream like I did if you don’t have the ingredients or time to make the homemade fluff. The store bought fluff isn’t as pliable and spreadable as the homemade fluff is, so I ended up swirling the top of mine a bit, into the fudge layer, and then toasted it. Mmmm….Have Mercy!!!!

Crust
  • 2 cups graham cracker crumbs
  • ½ cup butter, melted
  • ¼ cup granulated sugar
  • ½ tsp salt
Fudge layer
  • 2 cups milk chocolate chips
  • 14 oz sweetened condensed milk
Fluff Layer
  • ¾ cup sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • ¼ tsp salt
  • 2 egg whites
  • ¼ tsp cream of tartar
  • 1½ tsp vanilla extract

I scream, you scream…..we all scream for ice cream! I remember when my love affair for ice cream began. I was a dirty-nosed 5 or 6 year old – playing outside when I first heard this pretty music in the distance. All of a sudden, all the neighborhood kids run into their homes screaming…

“MOM, THE ICE CREAM TRUCK IS COMING! I NEED SOME MONEY!!!”

Needless to say, I had had ice cream plenty of times prior to this ice cream truck experience, but it’s a whole heck of a lot different when you have such an array of yummy frozen treats inside of a pretty and musical truck. It was the most beautiful thing, for a kid…almost magical.

My mom gave me money too, and I bought some kind of ice cream in a waffle cone with nuts on top. I’ve always liked “grown up people” kinds of ice cream, even as a kid. From then on, I always listened for the ice cream truck and when I’d hear it – I’d run and scream into the house like a wild banshee from then on! Just like all the other kids!

Ahhh, sweet childhood memories. I still live in the same house that I grew up in. Sadly, the ice cream truck doesn’t make it’s way down our road anymore {insert really sad face here}. However, I’ve kind of recreated some awesome-ness that reminds me of an adult version of my first ever ice cream truck experience.

Ingredients:

  • 2 Tbsp. chopped toasted almonds

Instructions:

We’ve been doing these awesome “12 days of”…… posts since Christmas. We did one for Christmas and another for Valentine’s Day and I think everyone loved them. Hidden Pot O’ Gold Pudding Parfait

St. Patrick’s Day seems to be the one holiday that we don’t always go all out for. I had some pistachio pudding up in the cabinet, and I thought….ahhh, what the heck. We’ll make a pudding parfait. Using what I already had on hand, I thought it would be SUPER cute to put pineapple at the bottom (to resemble the pot of gold). The cereal is of course, the rainbow. Who knew throwing a few simple things together would be so pretty, and tasty too. The kiddo loved them.

I recommend making your pudding and refrigerating until it’s set before beginning to put these parfaits together. You’ll want to serve them AS soon as they’re made so the cereal doesn’t get soggy. I’d also recommend smaller mason jars for smaller portions (for young kids).

  • Pistachio instant pudding mix
  • milk (for the pudding)
  • Fruit Loops or another colorful cereal
  • Pineapple chunks
  • RediWhip or whipped topping

 

Instructions:

  • Mix pudding according to directions and refrigerate until set.
  • Drain pineapple chunks and add to the bottom of the jars.
  • Next, layer cereal on top of the pineapple.
  • Then pipe or spoon in a thick layer of the pudding.
  • Finally, top each jar with a nice helping of whipped topping.
  • Enjoy right away!

I’m not much of a cook. I leave that to the husband. But I do love to bake!! Give me some flour and chocolate chips, some peanut butter and sugar, and I’ll just bake up a storm! Immaculate Baking sent me some goodies to try awhile back and I ripped open a box of their brownie mix this weekend, and my ohhhh – my. We foundered on ice cream and brownie sandwiches! Oh, yes we did.

These brownies had everything that you want in a brownie and more! Fudgey, dense, chewy on the inside and crispy around the edges. Mmmm. Ohh ohhhh….and they had chocolate chips in there too! YES!!

Ice Cream and Brownie Sandwiches

Talk about completely ruining dinner! HA!! We ruined breakfast, lunch AND dinner with these babies! We seriously couldn’t quit eating them. I kept ducking my head into the freezer for more ice cream. There’s not an actual recipe here. Just plop some ice cream between two ginormous brownies and proceed with caution. And a fork. Yes…I suggest a fork!! A recipe can’t get much simpler than that!

In case you’ve never heard of Immaculate Baking, here’s a little FYI! They’re line of baking mixes are natural, with no preservatives or high fructose corn syrup. Their goodies range from natural, organic, non-GMO and gluten free! I could actually understand what all of the ingredients were on the brownie mix label, beginning with wheat flour!

Rainbow Poke Cupcakes Perfect for St. Patrick’s Day

St. Patrick’s Day seems to always get ripped off when it comes to celebrating, right?! Aside from having to wear green, and getting the soup pinched out of you if you don’t….there’s not much else. Unless you drink green beer. Bleck.

I wanted to share a fun cupcake with you. These Rainbow Poke Cupcakes are so pretty and they’re so much fun to make! You can make a batch up to have at home OR to send to the kids’ classroom for their St. Patty’s Day partayyy! Who doesn’t love St. Patrick’s Day Cupcakes?! Before going any further…if you’re more of a throw together and go, then this St. Patrick’s Day Lucky Charms Trail Mix might be more your style!

If you’ve never had poke cake, you’re really missing out on a crazy bunch of goodness. Talk about moist. YUM! I first had poke cake when I was pregnant with little man. My sis in law made one for Easter and I swear, I could have ate the entire cake. I would have cut someone if they’d tried to stop me!

These rainbow poke cupcakes are JUST as good. You can’t eat just one. The recipe and some photos are below. If you’d like the printable version of the recipe to keep in your recipe box – just scroll down and you’ll find it.

Rainbow Poke Cupcakes Ingredients:

1 box White Cake Mix
1 cup Water
1/3 cup Vegetable Oil
3 Eggs
3 oz Lime Gelatin
1 cup boiling Water
1/2 cup cold water
AirHeads Extremes
2 tbsp Milk
1 cup softened Butter
4 cup Powdered Sugar
Green Food Coloring

 

DIRECTIONS

Make cupcakes according to box directions.
After baking move to wire rack to cool completely.

Poke holes in each cupcake.
Mix Jello and boiling water stir until dissolved.
Add 1/2 cup cold water and pour over cupcakes.

Refrigerate for at least 15 minutes.

In a large bowl, cream the butter.
Beat in the milk mixing until fluffy.
Transfer 1/4 of the icing to the corner of medium size zipper bag, try to minimize trapped air and close. Clip a small piece off the corner to pipe. Set aside.

Add several drops of green food coloring to remaining icing and mix until color is blended.
Transfer icing to the corner of large size zipper bag. Clip a small piece off the corner to pipe.
Cut each strip of the airheads into 2 1/2 – 3 inch lengths.
Ice the top of each cupcake with green icing.
Pipe a white cloud on each side of the green and insert the airheads strip between them to make a rainbow.
