Corn and Sausage Bisque

This is an older recipe on the blog, but with cool weather setting in soon, I wanted to reshare it. It’s Corn and Sausage Bisque (husband calls is chowder) and it’s crazy good! It was on my eMeals Menu Plan at one time.  Anyway, we are in LOVE with this recipe and I’ve switched out one of my menu plan days for next week with this recipe again. We like it THAT much!

First of all, how does having a weekly meal plan with a coordinating shopping list sent to you sound? Already made, with no work on your part! Who wouldn’t love that?! That is exactly what eMeals does for me, each and every week. They offer many different meal plan options. You can choose from the classic meal plan, paleo, gluten free, vegan and more.

eMeals really focuses on creating different and delicious meal plans using common ingredients. They also plan meals based on items that are often on sale or in season. They know that in season produce is cheaper than out of season produce. You can even choose your own store to shop at, and eMeals will send you your shopping list with prices based on the store you choose. You can opt for Walmart, Kroger, Target, Aldi, Publix, Whole Foods and more!

This service saves me SO much time and money! I always stick to my weekly meal plan and shopping list, and then just buy the occasional snack foods and things that aren’t on the list that we need in addition. Dave Ramsey recommends eMeals to help families who are budgeting and saving money! I can say first hand that it helps us save money each and every week and I wouldn’t know what I’d do without them! Their year’s subscription is just $5 per month!! That works out to roughly just $1.25 a week!!

Okay on to the Corn and Sausage Bisque recipe. Just an FYI: I made some cornbread muffins to go with this. I cheated and used boxed Jiffy Mix.

Corn and Sausage Bisque Recipe
Recipe Type: Dinner

Ingredients
  • 2 cups potatoes, cubed
  • 1 lb. smoked sausage (we used turkey)
  • 1/2 cup diced onion
  • 1/4 cup butter, melted
  • 1/4 cup flour
  • 1/2 teaspoon salt, 1/4 teaspoon pepper
  • 4 cups milk
  • 12 oz. corn (thawed if frozen)
Instructions
  1. Boil potatoes in water and cook until tender, 15-20 minutes.
  2. Drain and set aside.
  3. Slice sausage into bite size pieces.
  4. In skillet, saute onion in butter.
  5. Add flour, salt and pepper.
  6. Stir constantly for 1 minute.
  7. Add milk and bring to a boil.
  8. After 1 minute add corn and sausage.
  9. Return to a boil.
  10. Reduce heat and simmer for 10 minutes.
  11. Stir in potatoes and heat through.
Notes
Serve with cornbread.
