Chicken and Dumplings Recipe (Using Canned Biscuits for Dumplings)

One favorite comfort food of ours is chicken and dumplings. My mom once showed me how to make homemade dumplings but since we always have canned biscuits in the fridge I prefer to just keep it quick and easy and use those instead. There’s just something special about chicken and dumplings. Usually the first spoonful makes you go, “Mmmmmmm”.

We always have chicken and dumplings with these awesome mashed potatoes! Throw in some biscuits or cornbread and Oh.My.Goodness! I wanted to share the recipe with you so here’s how we make it.

Boil 2-3 boneless skinless chicken breasts on the stovetop until tender and done. Lay them on a plate and cut open with a fork to make sure they’re done cooking. When the chicken is done, leave all the juice and water in the pot that you boiled it in. That fat makes for nice flavor!! Shred the chicken with a fork and just set aside.

Tear open a can of biscuits and cut or tear each biscuit into 4 pieces. If you’re using the Grand size biscuits, you’ll tear them into about 6 or 8 pieces. That’s what we usually use. Drop these pieces into some flour to just coat. Then drop each piece into the boiling water that you boiled the chicken in. Let these boil, you can turn the heat down to medium or medium high so it’s not a hard boil. Go ahead and add about 1/4 stick (give or take) of butter to the pot.

It’ll take about 30 minutes or so for the dumplings to cook all the way through. You can check on them by cutting one in half. If it’s still rather doughy then continue to let them boil. Once they’re done, add the shredded chicken into the pot and 1 can of cream of chicken soup. Also add in salt and pepper. Stir until there are no clumps of soup in the pot, cover, and simmer for about 15 minutes on low heat stirring occasionally.

Pour into soup bowls and let it sit to cool for a few minutes before serving. Salt and pepper to taste. Leftovers can be frozen!! The printable version of the recipe can be found below.
