It’s that sweet time of year. The time when the family gets together and makes yummy holiday treats! We spend hours in the kitchen, making our favorite family recipes. This year – I wanted to put a fun spin on one of our faves and I created these chocolate peppermint truffles!

Peppermint and chocolate just go together. Kinda like Lucy and Ethel. Don’tcha think?! I’m thinking Lucy is the peppermint (cause she’s a hot little number) and Ethel is the chocolate. Always consistent. Yeah.

Since the holidays are the sweetest time for our family, my sister and I usually get together with a ginormous list of treats to create. We head to the grocery store, with lists in hand, and come home with bags and bags of goodies. You can’t plan on baking and treat makin’ without the time tested and ancestor approved baking products from The Hershey Company. They have stood the test of time. From the classic ingredients like Hershey’s Chocolate Chips and Hershey’s Cocoa  – even to the iconic Hershey’s Kisses Chocolates.

Chocolate Peppermint Truffles Ingredients:

  • 2 cups chocolate hazelnut spread
  • 1/2 cup cold butter, cubed
  • 2 cups confectioners sugar
  • 1/2 tsp vanilla extract
  • 12 oz. bag of Hershey’s Kisses Candy Cane Mint candies
  • 12 oz. bag of Hershey’s Semi-Sweet Chocolate Chips
  • 1/4 cup shortening
  • crushed candy canes for dusting the tops of truffles (I used 3 candy canes)

In a large bowl and using your hands, combine chocolate hazelnut spread, confectioners sugar, butter, and vanilla. Combine well. You want the “dough” to be able to hold together well enough to roll into a ball without crumbling. If it’s too dry, add more hazelnut spread. If it’s too moist – add more confectioners sugar.

2.) Scoop out enough dough to roll into a ball (roughly about 1 to 1 1/2 ” in diameter) using your hands. Place ball into your palm, and with your finger or thumb, press down into the ball to create a “pocket” for the Hershey’s Kisses Candy Cane Mint candies to sit into.

These chocolate peppermint truffles are our new family favorite holiday treat! We've got the recipe at www.sweetpenniesfromheaven.com4.) Melt the Hershey’s Semi-Sweet Chocolate Chips according to the packages melting directions. Add shortening to the melted chocolate, and combine really well. You may need to stick back in the microwave for 15 seconds to finish melting. The shortening thins out the chocolate and adds a nice sheen to the finished product.

5.) Add candy canes to a zippered plastic bag and crush using a rolling pin. Place the candy cane dust into a shallow dish, for easy grabbing in a few minutes.

6.) Dip a truffle into the melted chocolate, using a fork. Roll it around to make sure the whole truffle is coated and then let the excess chocolate drip through the fork prongs. Use a butter knife to scoop the truffle off the fork onto another sheet of wax paper.

I have two baking sheets, so I just transfer them from one onto another. While the chocolate is still wet – sprinkle with candy cane dust. Repeat this process till all truffles are finished. Let dry on wax paper for a few hours or overnight. Yields approximately 2 and 1/2 dozen.

Storing Chocolate Peppermint Truffles:

You have a couple of options here. You can either leave out in an airtight container at room temperature or keep chilled in the refrigerator. I like them at room temp. but my husband likes them cold out of the fridge. The Hershey’s Kisses Candy Cane Mint candies stay hard when kept in the fridge.   Make sure to include all of these awesome Hershey products to your shopping list to create your yummy sweet traditions:

Chocolate Easter Bunny Surprise (12 Days of Easter Recipes and Crafts)

Today’s post in our 12 Days Days of Easter recipes and crafts is a really cool one! It’s a bit more of an “edible craft” than an actual recipe. It’s also helpful for those who prefer the “wow” without all the work! Hollow Easter Bunnies can be a bit disappointing to little ones so this Chocolate Easter Bunny Surprise idea that Victoria at Mom Does Reviews is sharing is really awesome!

She shows you how to open up the hollow bunny and fill with little goodies inside. Then put back together with no hint at all that it was ever opened. Dark Chocolate Nut Clusters with Cherries

I have a confession.  At some point I have developed a sweet tooth.  It never used to be this way.  I used to always go for the salty or sour snack over something like chocolate but recently that’s changed.  It was always easy to find somewhat healthy options for salty type snacks but sweets are a bit tougher.  These Dark Chocolate Nut Clusters with Cherries are the perfect solution!  Not only are they delicious but they are a much healthier option.  Because they are homemade I also know everything that goes into them and feel good about my family enjoying them!

Dark Chocolate Nut Clusters with Cherries

Ingredients:

  • 24 oz dark chocolate chips
  • 2 cups chopped walnuts
  • 1 tbsp organic virgin coconut oil
  • 1 1/2 cups dried cherries (or another dried fruit that you like)
  • parchment paper

Instructions:

In a microwave safe bowl combine the chocolate chips and the coconut oil.  Melt on high in the microwave for 2-3 minutes stirring often.

When the chocolate and coconut oil are completely melted and smooth add the walnuts and dried cherries.  Stirring them together until all are well coated.

Drop the mixture onto a sheet of parchment paper using a large spoon.

Place the clusters in the freezer for 10-15 minutes to help the chocolate set.  Remove from freezer and let them harden the rest of the way.

Transfer to a platter to serve right away or into mini cupcake wrappers.  If you are not going to serve immediately (or eat them all, trust me it is tempting) place them in an air tight container and store in a cool place.

These are a great treat and there are so many health benefits of dark chocolate, coconut oil, walnuts and cherries!  Make some of these and share with your Valentine!

Peppermint Divinity Christmas Candy Recipe

Divinity is a holiday candy that reminds me of childhood.  If you’ve never had it, it’s a little hard to explain.  The texture is similar to a nougat but it is light and fluffy and can easily be made in many different flavors like this Peppermint Divinity.

Ingredients:

  • 2 cups granulated sugar
  • ½ cup light corn syrup
  • ¼ tsp salt
  • ½ cup hot water
  • 2 egg whites
  • 1 tsp vanilla extract
  • 2 drops peppermint candy flavoring oil
  • crushed candy canes or peppermint candies.

 

Instructions:

Beat egg whites until stiff.

Dissolve the sugar, syrup, and salt in the hot water.

Cook the mixture, do NOT stir, until the temperature reaches 248 degrees or the firm ball stage.

Wash down the sides of the pan with a damp cloth if any crystals form during cooking.

Remove the mixture from the heat and gradually pour over the stiffly beaten egg whites.  Beat constantly with whisk.   You will probably want to use a stand mixer as this process takes quite some time.

Add the extract and flavoring and continue beating until the mixture will hold its shape when dropped from a spoon.

Drop the divinity by teaspoonfuls onto waxed paper or spread into a greased pan and cut into squares.

While the divinity is soft, sprinkle crushed up candy canes or peppermint candies on top and gently press into the mixture.

Divinity is a candy that takes patience to make as the process requires whisking for quite some time but the fluffy nuggets are a beautiful holiday treat!

  • 1/2 cup Sugar
  • 1/8 tsp Salt
  • 1/4 cup Chocolate Chips
  • 1/4 cup crushed Candy Canes (about 3)
  • 1/4 cup Mini Marshmallows
Instructions
  1. Layer ingredients in order listed above, pressing firmly after each layer.
  2. Seal with lid and decorate with ribbon and labels. Use cute scalloped crafting scissors to cut out the labels for added character.
