Glazed Pumpkin Banana Bread + How to Combat Tummy Trouble this Holiday Season

Do the holidays just get ya? Right in the feels?! It does me too, and that’s why I’m sharing this yummy-licious glazed pumpkin banana bread recipe!

I stay “giddy” all through November and December. The music, the movies on Hallmark, the chilly air outside, and then there’s the FOOD. All. The. FOOD.

I consume more calories in November and December than I do all of the rest of the year combined. Not even kidding! But, don’t we all??!! I tend to get rumblies in my tumblies sometimes though, especially during the holidays, so thank goodness I have a few favorite digestive health relief products that I can depend on!

Thanksgiving is over and we’re gearing up for Christmas, however, we do still have a few weeks left. I’ve been wondering what in the world to do with my leftover canned pumpkin. And just FYI, no. I’m not sick and tired of pumpkin just yet! I also had some REALLY ripe bananas leftover, so…I made this delicious glazed Pumpkin Banana Bread!

Pumpkin Banana Bread Ingredients (makes 2 loaves)

  • 5 cups flour
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. ground cinnamon
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 3 really ripe bananas
  • 1 15 oz. can pure pumpkin
  • 1 stick softened butter
  • 3/4 cup sour cream
  • 1 1/2 tsp. vanilla extract

Glaze Ingredients:

  • 1 1/4 cups powdered sugar
  • 3 tablespoons milk
  • 1 tsp. of vanilla extract

Instructions:

  1. Preheat oven to 350 degrees.
  2. Grease 2 loaf pans.
  3. Combine flour, baking soda, salt, ground cinnamon.
  4. In a large mixing bowl, cream together the butter, sugar, and brown sugar. Then slowly add the pumpkin, banana, sour cream, and vanilla extract.
  5. Add the dry ingredients and mix slowly until completely combined.
  6. Pour the batter evenly, into the 2 greased loaf pans.
  7. Bake at 350, for 40-45 minutes or until toothpick inserted in the center is clean.
  8. Place loaf pans on a wire cooling rack. After they’ve cooled – it’s time to pour the heavenly glaze over the top!

 

Glaze Instructions:

  • In a small bowl, combine the powdered sugar, milk, and vanilla extract. Whisk until it’s creamy. You can add more milk to get the consistency you want.
  • After bread is completely cool, drizzle the glaze over each loaf.
  • Enjoy!

I know that the holidays are the time that we enjoy the best foods! Things that we don’t often get, and yummies that are slap full of calories, and other goodness! My belly usually doesn’t agree with all of that. Yours probably doesn’t either.

I struggle with breakfast on most days, and folks…the struggle is real. I have to keep my fridge stocked with easy – yet HEALTHY options or else I reach for that snack cake in the cabinet. Yes. A snack cake at 7:30 am. Making things like this yummy make ahead pumpkin pie baked oatmeal, on a weekend, allows me to have a delish breakfast every day through the week. Sometimes I double the recipe, in case I have to share with these pesky people that live in my house. Sigh.

I am a creature of habit. I actually enjoy having the same things for breakfast every day. This pumpkin pie baked oatmeal is FULL of healthy goodness. Lots of fiber, protein and vitamins. Anytime that I can take a recipe and make it healthier by swapping ingredients with something like Yoplait yogurt, I’ll do it. Usually, that recipe turns out better!!

This isn’t only the perfect fall breakfast idea….but it’s the perfect mid-afternoon snack for me too. Something that gets me through, till dinner time.

Pumpkin Pie Baked Oatmeal ingredients:

  • 1 cup canned pumpkin puree (not pumpkin pie filling!)
  • 1 1/2 cups Yoplait Greek 100 Vanilla yogurt
  • 1 egg
  • 1/3 cup maple syrup
  • 1/4 cup brown sugar
  • 1 tsp. vanilla
  • 1/4 cup melted butter
  • 2 cups old fashioned rolled oats
  • 1/2 cup crushed pecans, walnuts or hazelnuts (your favorite)
  • 3 tsp. Pumpkin Pie spice
  • 1/2 tsp. salt

 

Instructions:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine pumpkin, yogurt, egg, syrup, brown sugar, vanilla and melted butter.
  • After that is combined, stir in the oats, nuts, pumpkin pie spice and salt. Mix till well combined.
  • Pour into a greased 8×8 pan, and bake for 25-35 minutes or until the top is browned and the oatmeal is set.
  • Allow to cool – then cut and serve warm with maple syrup and a dollup of whipped topping.

On days that I don’t have something like oatmeal, I usually reach for a yogurt and a handful of granola or fruit, like pineapple and strawberries. My faves! Yoplait has a lot of varieties that we really like. The husband likes the regular, while I’m a big fan of the Greek yogurts. As for the kiddo, Gogurt is perfect for lunchbags or as an after school snack. He gets off the school but STARVING and wants to eat as soon as he walks through the door. We always stock up on our Yoplait at Walmart.

I’m one of those baby steps kinda people. I can’t give up pizza or chocolate, but I can make small changes that will bring big results in the end game. Eating breakfast EVERY day is one of those small changes, but I reallllly don’t have time through the work week to crack an egg in a skillet or whip up a batch of waffles. I just don’t. I’ve been buying the Jimmy Dean Delights breakfast sandwiches for awhile now and they’re my absolute fave because they’re perfect, straight outta the microwave. Cooked to perfection in like, less than 3 minutes. By the time I make my coffee, BOOM my breakfast is ready! My husband jokes with me because when we have those in the house – that’s the only time I eat breakfast. He’s not fooling me though, he loves when I buy them and he really likes the flatbread sandwiches.

But guys, I am seriously in LOVE with them. Other breakfast sandwiches that I’ve tried turned out too spongy or whatever. Just bleck…never good. Not with Jimmy Dean though. They’re just perfect, like every part of the sandwich was cooked fresh and put together. I guess it helps that Jimmy Dean uses REAL eggs, REAL sausage and REAL cheese!

Again, since making small changes, (small changes = big results) is one of my goals, I grabbed some of their under 300 calorie sandwiches at Meijer the other day. I’d normally never buy turkey sausage, just because I’m not usually a big fan but man ohh mannnnn. Those babies were good! Just as good  as their regular sausage sandwiches. I would never have guessed it was turkey. Ever. They’re also made with egg whites vs. regular eggs and they use english muffins, flat bread or croissants! I more than love all of them and I haven’t skipped breakfast in over a week now.

Small change = BIG results. BAM!

 What’s your go-to Breakfast on a busy morning?

Mornings can be so stinking hectic around here, and I know I’m not the only mom who feels that way! Some mornings, it’s a wonder I even have a hair left ON my head by the time little man gets on the school bus. Between him, my lack of coffee and 2 dogs who can destroy my house in 2 seconds, flat…mornings can be unkind.

So we stick to super easy breakfasts on weekday mornings. What is your go-to breakfast on a busy morning?? We want you to tell us! Us moms at Moms Check In are chiming in too! Here’s what myself and the other Moms Check In moms tend to do through the week.

Kay, so I’d love to say something really awesome like homemade biscuits and gravy – but uhhhhh no. My go-to breakfast on a busy weekday morning is coffee. Occasionally I’ll squeeze in a granola bar and I intentionally buy the ones with protein so I get that little bit in the mornings. Now, on the weekend – it’s all kinds of breakfast up in our house! My husband can THROW down in the kitchen! Our favorite is this Cinnamon and Brown Sugar French Toast Bake. YUMMO!

Well, when I think of it the night before I make a batch of baked oatmeal. It’s SO good and the combinations are really endless. But most of the time, let’s be honest. I don’t think ahead (often). We are big cereal and banana fans. I’m trying to be good and eat before we leave for school because last year we got in a bad habit of going through the Starbucks drive through on the way to school, a lot. I will say, they have yummy breakfast sandwiches! 🙂

My daughter loves cereal and will eat Mini Wheats with blueberries every day which is quick and easy and works for me! My son likes frozen waffles and French toast sticks with peanut butter on them and fruit, usually blueberries or raspberries. I try to fill them up on a school day and get some protein and fruit in them. Now, on the weekends? My husband cooks and makes blueberry pancakes (can you tell we like blueberries yet?) on Saturday and scrambled eggs on Sunday. Those are my favorite days, of course!

Fun Breakfast Waffle Tacos

Waffle Tacos

I’m so happy to see that breakfast waffle tacos are on the scene!! Have you been hearing all the buzz about them on social media? Apparently, Taco Bell will soon (if not already) be offering them! Now, I know some of you may be thinking, “Whaaaa?” but I personally, am a fan!

I’m also a fan of fish tacos, but not on waffles – and not for breakfast. That’s just gross.

But seriously, check out this post about Taco Bell making waffle tacos a new breakfast item! They’re adding some other fun items to the menu as well, but I’m really intrigued with the waffle idea. Also, check out hashtag #waffletaco on just about any social media channel for some fun. I’ve been stalking that hashtag here on Twitter.

I told my husband allll about these and since breakfast is his favorite meal of the day, we ended up having breakfast waffle tacos for dinner. We have breakfast for dinner on occasion. Love it.

We ended up making a couple different ones…just for fun. Check’em out.

Breakfast Waffle Taco Ingredients:

  • Sausage (or bacon)
  • Eggs
  • Gravy (either a favorite homemade gravy or a gravy mix will work)
  • Frozen or Homemade Waffles
  • *Cheese would have been good too. All melty in there, between the egg and the sausage goodness. Wish I’d have thought of that before now!

Instructions:

  • Crumble sausage in skillet and fry until done.
  • Make the gravy according to package directions or according to your own homemade recipe.
  • Scramble eggs or make thin omelets.
  • Microwave frozen waffles for 30-60 seconds (you just want them warm, not too hot). If you use the toaster instructions on the package, they’ll come out too hard and will break when you shape them into a taco form. Microwaving them made them nice and pliable.
  • Let waffles cool to touch and then assemble tacos. Holding the waffle with your hands, in the shape of a taco, start with the egg first then layer on the sausage and gravy.

We also made a sweet breakfast waffle taco variety with some fresh fruit and whipped cream. Anndddd just a dab of chocolate syrup. Who says you can’t have a teeeency weeeency bit of chocolate syrup for breakfast?

Strawberry and Banana Breakfast Waffle Taco ingredients:

  • Frozen Waffles
  • Sliced Strawberries
  • Sliced Bananas
  • Whipped Cream
  • Chocolate Syrup

Instructions:

  • Slice strawberries in thin slices.
  • Slice Bananas
  • Microwave waffles for 30-60 seconds (just until warm, not too hot).
  • Let waffles cool to touch, then hold the waffle in the shape of a taco. Add a layer of bananas, then a layer of strawberries.
  • Top with whipped cream and a teeeency weeeeency bit of chocolate syrup. 😀

Dr. Seuss Cat in the Hat Breakfast Waffles

Dr. Seuss week is being celebrated at little man’s school next week. I love that! Makes me think of all of Dr. Seuss books I read when I was itty bitty, and now he gets to enjoy all things Seuss too! He’ll love getting to wear his favorite Dr. Seuss pajamas to school one day next week. That’s one of the little things they get to do.

I thought these waffles would be FUN for him to have the morning he heads to school in his PJ’s. Something simple. Something cute and fun. Something that resembles the Cat in the Hat’s actual HAT!

We’re calling these the Dr. Seuss Cat in the Hat Breakfast Waffles. You can find the handy dandy printable recipe down below if you’d like to print it out and stick back in your recipe box.

 

Dr. Seuss Cat in the Hat Waffles

Dr. Seuss Cat in the Hat Breakfast Waffles

You’ll need:

  • Frozen Waffles (unless you want to make scratch waffles)
  • Redi-Whip
  • Strawberries
  • *Syrup

We didn’t use any syrup on ours. The Redi-Whip started melting after I put it on and we let that be our “syrup”. However, maple syrup would be good but warm strawberry syrup {YUM} would be even better!!!

Directions:

  • Just fix your waffles according to the package directions. Allow to cool for just a few minutes so the Redi-Whip doesn’t melt too fast.
  • Layer Redi-Whip on top of the waffles.
  • Add halved strawberries all around the edge of the Redi-Whip.
  • Add another layer of Redi-Whip.
  • Add another layer of strawberries.
  • Add one more layer of Redi-Whip in the center….sort of piled into a peak.
  • Then top with a strawberry.

French Toast Bake with Brown Sugar and Cinnamon

Don’t you love French Toast? Gosh, I do! I love having it the normal way – you know, sliced bread dipped in egg and fried to perfection. But then there are those times when you want to go a step further. That’s where this French Toast Bake comes into play.

This recipe is simply delicitastic! Fabulorious!! Those are words in my kitchen. I decided to make it, bake it…..and then devour it this past weekend! It’s one recipe that you can easily prepare the night before and pop in the oven the next morning.

That’s what I did. I think letting it sit overnight just lets all the spices and sugars blend and soak into that yummy bread. Okay, here’s how to make it. At the bottom of the post you’ll find the printer friendly version. Print it and stick it in your handy dandy recipe box and put it on your breakfast menu plan for this weekend!

French Toast Bake Ingredients:

  • 1 loaf of french bread (16 oz.)
  • softened butter (for buttering your dish)
  • 8 large eggs
  • 2 cups half and half (one pint container)
  • 1 cup of milk (whole or 2%)
  • 1 tablespoon of granulated sugar
  • 4 tablespoons of brown sugar
  • 1  1/2 teaspoons of cinnamon
  • 1 1/2 teaspoons of vanilla extract
  • Dash of salt

french toast bake Start by cracking all 8 eggs into a large mixing bowl and whisk together. Then whisk in the half and half and the milk with the eggs. Yummy. Creamy. Goodness!   french toast bake Add to the egg/cream mixture the brown sugar, granulated sugar, cinnamon, vanilla extract and salt and whisk together. Take a whiff! Smell that sweet goodness?! The brown sugar and cinnamon will clump up towards the top, that’s okay! Just set this mixture to the side for now.   french toast bake

Butter your baking dish. Make sure to butter the sides as well. Don’t miss a spot!

  french toast bake Start cutting your loaf of French bread in slices, about 1 inch thick. Then take each slice and either cut or tear the pieces into bite sized pieces and begin adding the chunks to your buttered 9×13 or larger baking dish. Try to equally layer the dish with chunks of bread.

Once you’ve got all the bread chunks into your dish, it’s time to pour over the egg/cream/sweet mixture. Pour the mixture over evenly covering all the areas. Use a spatula to stir the pieces up a bit to ensure all the pieces of bread are saturated with the mixture. Spread it evenly and cover with with foil or plastic and stick in the fridge over night.   French Toast Bake Now, for the topping. This is seriously good stuff. You can make it ahead too and keep covered in the fridge or make the next morning.

 

Crumble Topping Ingredients:

  • 5 tablespoons of brown sugar
  • 5 tablespoons of granulated sugar
  • 1 teaspoon of cinnamon
  • 4 tablespoons of cold butter
  • * 1 cup of chopped pecans (optional)

Add brown sugar, granulated sugar, cinnamon and cold butter to a bowl. Use a pastry cutter or a fork to work the cold butter into the sugars and cinnamon. Work together until it’s all combined. Go ahead and smell it…you know you wanna!

Pre-heat oven to 350 degrees. Take off the foil or plastic from the baking dish and sprinkle the crumble topping evenly over the top of dish. Next sprinkle evenly the chopped pecans (optional, but so yummy). I didn’t use pecans this time cause hubby don’t like them. I much prefer it with pecans though. Bake at 350 degrees for 40-45 minutes. Use a toothpick or a knife to check to see if it’s done. If it comes out clean when inserted in the center, then you’re good to go! The top will be a nice and crispy brown sugary brown color.   french toast bake   french toast bake Let it rest and cool for about 10 minutes and then cut and serve. Get creative with your extra toppings. I prefer powdered sugar and a little maple syrup. The hubs (taste tester of everything I make) likes his with melted butter and the little guy prefers it with maple syrup too. But you could totally go all out with fresh fruit, whipped cream, the sky’s the limit.

Ingredients
  • French Toast Bake Ingredients:

  • Crumble Topping Ingredients:

  • 4 tablespoons of cold butter
  • * 1 cup of chopped pecans (optional)
Instructions
  1. For the French Toast Bake:
  2. Start by cracking all 8 eggs into a large mixing bowl and whisk together.
  3. Then whisk in the half and half and the milk with the eggs.
  4. Add the brown sugar, granulated sugar, cinnamon, vanilla extract and salt and whisk together.
  5. Cut loaf of french bread into approx. 1 inch slices, and then tear each slice up into bite size pieces. Evenly layer the pieces of bread into a generously buttered 9×13 baking dish.
  6. Pour the egg/cream/spice mixture evenly over the bread. Use a spatula to mix and stir the bread around, ensuring all of the bread is saturated with the mixture.
  7. To bake now, follow the instructions below. If you want to cook in the morning, then cover with foil or plastic wrap and stick in the fridge over night.

  11. To make the crumble topping (ingredients in the ingred. list above), add brown sugar, granulated sugar, cinnamon and cold butter to a bowl. Use a pastry cutter or a fork to work the cold butter into the sugars and cinnamon. Work together until it’s all combined.
  12. Remove foil or plastic wrap if you let sit overnight. Sprinkle the crumble topping evenly over the top of dish.
  13. Then sprinkle chopped pecans (optional) over the top.
  14. Bake in preheated 350 degree oven for 40-45 minutes or until toothpick inserted comes out clean.
  15. Serve with syrup, whipped topping, fresh fruit, powdered sugar or whatever you like.
  16. Enjoy!
