glazed pumpkin banana bread

Glazed Pumpkin Banana Bread + How to Combat Tummy Trouble this Holiday Season

December 2, 2016 by Jenni 1,826 Comments

Do the holidays just get ya? Right in the feels?! It does me too, and that’s why I’m sharing this yummy-licious glazed pumpkin banana bread recipe!

I stay “giddy” all through November and December. The music, the movies on Hallmark, the chilly air outside, and then there’s the FOOD. All. The. FOOD.

I consume more calories in November and December than I do all of the rest of the year combined. Not even kidding! But, don’t we all??!! I tend to get rumblies in my tumblies sometimes though, especially during the holidays, so thank goodness I have a few favorite digestive health relief products that I can depend on!

glazed pumpkin banana bread

Thanksgiving is over and we’re gearing up for Christmas, however, we do still have a few weeks left. I’ve been wondering what in the world to do with my leftover canned pumpkin. And just FYI, no. I’m not sick and tired of pumpkin just yet! I also had some REALLY ripe bananas leftover, so…I made this delicious glazed Pumpkin Banana Bread!

glazed pumpkin banana bread recipe

Pumpkin Banana Bread Ingredients (makes 2 loaves)

  • 5 cups flour
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. ground cinnamon
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 3 really ripe bananas
  • 1 15 oz. can pure pumpkin
  • 1 stick softened butter
  • 3/4 cup sour cream
  • 1 1/2 tsp. vanilla extract

Glaze Ingredients:

  • 1 1/4 cups powdered sugar
  • 3 tablespoons milk
  • 1 tsp. of vanilla extract

glazed pumpkin banana bread recipe

Instructions:

  1. Preheat oven to 350 degrees.
  2. Grease 2 loaf pans.
  3. Combine flour, baking soda, salt, ground cinnamon.
  4. In a large mixing bowl, cream together the butter, sugar, and brown sugar. Then slowly add the pumpkin, banana, sour cream, and vanilla extract.
  5. Add the dry ingredients and mix slowly until completely combined.
  6. Pour the batter evenly, into the 2 greased loaf pans.
  7. Bake at 350, for 40-45 minutes or until toothpick inserted in the center is clean.
  8. Place loaf pans on a wire cooling rack. After they’ve cooled – it’s time to pour the heavenly glaze over the top!

Glaze Instructions:

  • In a small bowl, combine the powdered sugar, milk, and vanilla extract. Whisk until it’s creamy. You can add more milk to get the consistency you want.
  • After bread is completely cool, drizzle the glaze over each loaf.
  • Enjoy!

I know that the holidays are the time that we enjoy the best foods! Things that we don’t often get, and yummies that are slap full of calories, and other goodness! My belly usually doesn’t agree with all of that. Yours probably doesn’t either.

While I’m out grabbing groceries for holiday dinners and ingredients for all of the candies and treats we make, I make sure to grab some of the items that take care of the belly issues too. Like the new IMODIUM® A-D® Softgels. Umm. Hello! These are a life-saver!

imodium-walmart

I grabbed mine while we were at Walmart. The husband heads straight to the electronics department. (eye-roll). I stop at the pharmacy for the IMODIUM® and then make a quick pit stop by the toy department. Luckily – I made it out of there without getting anything! Then ran on over to get all of the groceries on my list.

imodium-walmart-2

Make sure to stock up on IMODIUM® and all of the other digestive health relief products at Walmart — for the whole family! You never know when diarrhea will rear it’s ugly head! Gahhh! Better to be prepared, just in case — especially if you’re traveling for the holidays.

Visit Walmart.com/digestivehealth to learn more and shop these brands to feel better from top to bottom!

Are you planning to host a holiday dinner or make a dish or dessert to take to your family dinner? Our pumpkin banana bread will be a hit!! You should also check out some of these other easy and delicious recipes!

Enjoy and have the Happiest of Holidays!!

Hawaiian Toast with a REAL Cheese Twist!

November 8, 2016 by Jenni 1,679 Comments

This is a sponsored post written by me on behalf of Sargento® Cheese. All opinions are 100% mine.

hawaiian toast

Hawaiian Toast

You know the old “Farmer in the Dell” song?! The cheese stands alone?! Well, that’s fine by me. I can eat cheese — all by itself. And I do, often. Cheese is a major staple in our kitchen. I’m not talking about the cheese singles, either. I like the real deal.

Did you know that…

Pasteurized Process Cheese Food, sometimes known as American singles, is only required to contain 51% real cheese?!?!?!

Our fave REAL cheese brand is Sargento® Sliced Cheese. They only make 100% natural, REAL cheese. They’re the Real Cheese People! They want to rally consumers to create a community of cheese lovers to declare their passion and love for the real deal.

A German friend of mine named Dieter, told me about a treat that his family always had back home in Germany. It’s called Hawaiian Toast, or more formally – Toast Hawaii. It’s a delicious recipe – but it was always made with cheese singles, he said. I wanted to change this recipe up by using REAL cheese – and on whole grain bagels vs. white bread. Here’s how it went…

hawaiian toast

Hawaiian Toast Ingredients:

  • whole grain bagels (or you can use any bread you like)
  • Sargento® sliced cheese (any variety, we used swiss and sharp cheddar)
  • pineapple slices, drained really well
  • sliced or shaved ham

hawaiian toast

Directions:

  • Preheat oven to 350 degrees.
  • Warm ham through in a skillet on medium heat.
  • Toast bagels or toast in toaster.
  • Pile ham onto bagel, or toast. Place a drained pineapple ring on top. Place a slice of cheese (or two!) on the top.
  • Place in the oven and bake just until the cheese starts to melt and bubble up.
  • Enjoy!

hawaiian toast Just look how yummy these turned out! They were DELICIOUS!!!!!

hawaiian-toast-sargento-cheese

You can (and should!) replace all of your cheesy recipes and favorite snacks/treats with Sargento® cheese! There’s nothing like the taste of REAL cheese!! It’s perfect for your burgers, sandwiches, wraps, etc! Visit them on Instagram and Facebook to find awesome and EASY recipes and snack ideas!

Seriously Fast & Easy Baked Italian Chicken with NEW Idahoan Signature Russet Mashed Potatoes

September 29, 2016 by Jenni 1,914 Comments

I’ve partnered with Idahoan on this sponsored post and all opinions stated are my own.

idahoan-signature-russets-3

Let’s face it. Potatoes are an integral part of dinnertime. Especially at our house. My husband is one of those “meat and potatoes” kinda guys.

There’s just one thing though. This momma don’t have the time, NOR the energy to stand and peel potatoes, cut potatoes, boil potatoes, and then mash the heck out of them to get all the lumps out. Don’t get me wrong, I do love me some mashed potatoes – but the real deal around our house isn’t as often as I’d like.

Ahem. Until NOW.

I’ve always been a huge fan of Idahoan because they are the best tasting “instant” out there, in my opinion. Well, they have overwhelmingly upped their game!!!

idahoan-signature-russets-2

The new Idahoan Signature Russets Mashed Potatoes are SO STINKING GOOOOOOOOOOOD! You’d swear to the heavens above, that these were 100% completely homemade at your grandma-ma’s house! Not even kidding!

They have a very smooth taste, just like original homemade mashed potatoes with just a hint of butter and cream.

My husband is always a griper about my mashed potatoes. It wouldn’t matter if they were liquid gold, he’d still find a complaint. Not this time. He ate 2 huge helpings, and then came back and basically licked the pot clean. Kidding (sooooo not kidding!) 😉

idahoan-signature-russets-5

I made these the other night with one of my super quick and easy chicken recipes. We’re having some remodeling done on the house, and this particular night — by the time dinner time came – I was too tired and needed something hearty for dinner! This was a HIT.

2 Ingredient Baked Italian Chicken Recipe ingredients:

  • 3-4 chicken breasts, thawed
  • 1/2 cup (give or take) Zesty Italian Salad Dressing

Instructions:

  • Place chicken breasts in a plastic container or large zip lock bag with Italian dressing. Shake around until chicken is well coated. Stick in fridge to marinate for 30 minutes or so.
  • Place chicken in baking dish or pan, pour leftover dressing from the baggie over top. Bake at 400 degrees for 25-30 minutes or until no longer pink.
  • Spoon some of the hot dressing from the pan over chicken.
  • Serve with mashed potatoes and your favorite veggies!

idahoan-signature-russets-1

More reasons why I love the new Idahoan Signature Russets:

  • They’re delicious. Oh, wait…did I already say that?!
  • Makes any meal taste like Sunday dinner!
  • More than 6 pounds of premium Idahoan russet potatoes go into every 16 oz. pouch.
  • They use a new processing method that let’s the potatoes keep their natural goodness and texture. In the end, they taste as good as if you had peeled, boiled, and mashed them yourself!
  • Takes just 5 minutes using milk and butter….or just water!
  • You can get them in a 4 serving, 12 serving, or 20 serving pouch – and the pouches are resealable.
  • You can find them nationwide, including Walmart and Kroger NOW!

You literally can’t sit still and eat it at the same time. The only downside is that you might have oozing chocolate running down your hand, but hey…I don’t have a problem with that! Do you?!

Do you know what’s better than a chai latte? A chai latte that you can make AT home, in less than a minute! What’s even better?? Chai Tiramisu. Two of my favorite words – and I’ve combined them into one scrumptious dessert!

FullSizeRender

I’m currently crushing on the new sweet and spicy line of tea from TAZO®. Have you tried it yet?

Easy chai tiramisu without eggs, and using ladyfingers or vanilla wafers.

The TAZO® Chai Latte K-Cup® pods make fixing a Chai Latte at home a breeze! No standing in lines at the local coffee stop AND you don’t need any fancy equipment. Just a Keurig® coffee maker and you’re ready to enjoy a chai latte in 2 easy steps…and in like, less than a minute! For real…it’s INSANE!

First, you pour in the creamy latte mixture in the pouch.

Then you brew in the tea. Boom. Just like that, you have a nice steamy, and hot chai latte.

With the first sip, I was hooked. It’s so creamy and the all the sweet and spicy flavors just pop! Sweet cinnamon, fragrant cardamom, and spicy ginger…….

….all in one cup

…..at home

……..watching my favorite shows on tv!

It’s made from milk, tea leaves and spices. Steeped in 5,000 years of Indian history, chai is a beautiful blend of black tea with all those yummy spices and scents.

I want to drink it every day – for the rest of my life. Mmmm. You can click here to find where to buy the TAZO® Chai Latte K-Cup® pods so you can enjoy them for yourself.

TAZO has partnered with New York Times Bestselling author and host Padma Lakshmi to celebrate the release of the new K-Cup® pods. Since tea and chai are huge parts of her family’s heritage, she’s developed some incredible recipes that pair perfectly with some yummy chai. You can find all of the recipes here.

I wanted to create a recipe that I could infuse with the chai flavors. One of my favorite recipes has always been tiramisu. So, chai tiramisu it is! And it’s SO good!

Ingredients:

  • 1 cup heavy whipping cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 8 oz. mascarpone cheese, softened or at room temp.
(you can use 8 oz. of cream cheese if you can’t find mascarpone)
  • 8 oz. brewed and cooled TAZO® Chai Latte, reserve 1 tablespoon
  • 1 package of lady fingers, or vanilla wafers
  • ground cinnamon

Instructions:

In a mixing bowl, combine heavy whipping cream, sugar, and vanilla. Beat until stiff or hard peaks form.

Easy chai tiramisu recipe, with no eggs. You can use ladyfingers or vanilla wafers!

Gently fold in the softened mascarpone cheese, and 1 tablespoon of cooled chai latte.

Dunk each lady finger or vanilla wafer (using vanilla wafers in my recipe because I can’t find lady fingers in stock anywhere) into the remaining chai latte, and layer evenly onto bottom of an 8″ square pan.  DO NOT let the lady fingers or wafers soak. Literally…just dunk straight in and straight out, and layer into the pan. If you let them soak too long, they’ll get too mushy.

After the bottom is layered with cookies, spread half of the mascarpone mixture on top and spread evenly.

Add another layer of dunked lady fingers or vanilla wafers on top.

Spread the last half of the mascarpone mixture on top.

Sprinkle the top with ground cinnamon.

Refrigerate overnight or at least for 6-8 hours before serving.

Peanut Butter and Chocolate Milkshake (Plus Dairy Free Milkshake Alternatives)

May 12, 2016 by Jenni 1,148 Comments

Hey there & Welcome!!

I’ve just gotta ask…

Ever had a homemade milkshake?

A creamy, dreamy, heaven in your mouth homemade milkshake?

Guys. If you answered no, then you’re missing out and I feel so so soooo sorry for you and I’m giving you a virtual hug, right now. Bless your heart.

Peanut Butter and Chocolate Milkshake (including dairy free alternatives)

If you have encountered this bliss, then you KNOW just how easy they are to make…

…and how DELICIOUS they are…

…and how DECADENT they are.

Since PB and Chocolate is a favorite flavor combo among many, I wanted to share my homemade peanut butter and chocolate milkshake recipe.

What’s the most awesome thing about making homemade milkshakes?

Peanut butter and chocolate milkshake including dairy free milkshake options.

Everyone loves stopping at the local ice cream shop for a milkshake, but

cue Rolling Stones music…

you can’t…

always get…

what ya wa-aant.

NO.

You can’t…

always get…

what ya wa-aant!

Okay – for real. You can’t always get what you want when you buy from the ice cream parlor or restaurant. However, with homemade milkshakes, YOU control

  • what goes in it
  • how much sugar is used (or use sugar free products)
  • fun flavor combos
  • or make a dairy free milkshake (what??!!) That’s a REAL thing! And they’re JUST as good!!

Homemade milkshakes are the perfect option for families who deal with a lot of allergies or intolerances.

peanut butter and chocolate milkshake

It’s also a fun way to get the kids engaged with you IN the kitchen! Have a weekly “make your own milkshake” night. Let the kids be creative!

Here are a few fun milkshake ideas that you could throw together…

  • Peanut Butter and Banana
  • Peanut Butter and Jelly (oooohh)
  • Fudge Brownie and Ice Cream
  • Strawberry and Chocolate
  • Rocky Road
  • S’Mores

Or you could let them make a cool gross one like,

  • Potato chips and pickles (ewww!)

Either way, you’ve got to TRY our homemade peanut butter and chocolate milkshake! If you love Reese’s Cups, you’re gonna LOVE LOVE LOVE this one!

Did you know that even the smallest thing can create a chain reaction of happiness? We all love to make our family happy, and it doesn’t really take too much – especially if it’s just a grilled Smores sandwich! Do these things make you happy?

  • a morning hug and a kiss
  • a surprise “I love you” text or lunchbox note
  • making the family’s favorite treat

Those are just a few things that instantly come to my mind…small things that make me happy.

Nothing suits a belly better than a grilled Smores sandwich! Ever had one?

I’d love to know what little things make you happy! Maybe it can give me and everyone else a little more insight!

I’m really pumped to be working with HERSHEY’S on this Hello Happy Moments campaign. The idea behind it is to make us think about how to create happy moments – even in places or at times where we’re not usually happy, like during our morning commute, at work, or when our weekend plans have been rained out.

Check out this video. I bet you’ll cry, just like I did – so grab a tissue!

Yeah. Neither did I, till a couple of years ago.

peanut butter s'mores

Did you catch our Thin Mint Ice Cream Sandwiches post from yesterday? Yep! It’s Girl Scout Cookie time, and I wanted to re-share these ideas. I mean, Girl Scout Cookies are delicious on their own, right outta the package. But smushing things between 2 cookies. Well. Do I even have to explain how good that is?!

This post is an older one, but I wanted to update it and share it again because every home in America is being hit by the Girl Scout Cookie plague. You don’t wanna miss these……………….

DUN, DUN, DUUUUNNNNN.

Tagalongs Peanut Butter S’Mores.

Ohhhh, yes I did. Boy Howdy! I love smushing things between cookies. So – I hope you enjoy these.

IF you don’t have any Tagalongs, you can actually make Homemade Tagalong Girl Scout Cookies. My friend Andrea at Savings Lifestyle shows you how! Here’s a photo below of her yummy creation and the recipe is so super duper easy!!

peanut butter s'moresWhoops. Let’s try taking this photo again…

peanut butter s'moresLittle Man totally got away with that cookie!

You’ll need:

  • Girl Scout Tagalongs (or the Homemade Tagalongs recipe link above)
  • Regular size marshmallows
  • Baking Sheet (unless you’re roasting marshmallows outside)

How to Assemble:

  • Either roast your marshmallows outside (if it’s warmer weather) or you can roast them in your oven. Simply place enough marshmallows on an aluminum foil lined baking sheet, to make however many s’mores you want.
  • Turn the oven on broil (apprx. 500 degrees).
  • Put the pan with marshmallows in the oven and roast until just browned on top. Then pull them out and assemble your Tagalongs or other peanut butter cookie S’Mores.

*I kept my oven door cracked just a bit to keep a very close eye on them. They were ready in just a minute or 2.

**Don’t overbrown the marshmallows. I actually got mine a little bit TOO brown the first time around, but they were still sooooo good and gooey!

Thin Mint Ice Cream Sandwiches

Thin Mint Ice Cream Sandwiches

It’s that time of year! Girl Scout Cookie time has arrived and I wanted to send out this awesome post again, so that all of YOU can put these Thin Mint Ice Cream Sandwiches together!

These were so good and I couldn’t stop eating them. They’re pretty dang addicting. Are you ready for this super difficult Thin Mint Ice Cream Sandwiches recipe? Get ready, and take lots of notes. Juuuuuuust kidding. It’s really easier than peasy!

thin mint ice cream sandwiches ingredients

What You’ll Need:

  • Thin Mints Cookies (or any of these mint cookies will work if you don’t have Girl Scout Cookies on hand.)
  • Mint Chocolate Chip Ice Cream
  • Cookie or Ice Cream Scoop

Thin Mint Ice Cream Sandwiches

Thin MInt Ice Cream Sandwiches(The ice cream started to get soft, so I ended up sticking it back in the freezer before finishing the rest.)

Instructions:

  1. Use a scoop to plop one dollop of ice cream on top of one cookie. Smush ice cream down with another cookie.
  2. Eat.
  3. Repeat steps 1 and 2.

See how simple that is? Plop, smush, eat, repeat! Plop, smush, eat, repeat!

Thin Mint Ice Cream Sandwiches

Okay, now in all honesty…there are a few things I want to mention. Just to save you some time.

Before you begin to assemble these Thin Mint ice cream sandwiches, let the ice cream thaw JUST a little bit. Not too much. You want it thawed just enough that you can easily scoop it out. You still want the ice cream a bit firm, but easy to scoop.

When you smush the second cookie on top of the ice cream, just smush it till the ice cream starts to barely seep out the side and then stop! You don’t want to squeeze it so much that the ice cream starts coming out all the way. If it IS doing that too easily, you may need to stick your ice cream back in the freezer for a bit to stiffen back up.

After assembling them, place back in the freezer on a wax paper lined baking sheet, tray, or plate until it’s time to serve them. They’re actually too hard to eat if the ice cream is soft so you want them nice and frozen!

Ingredients
  • Thin Mints (or any Mint cookies would work)
  • Mint Ice Cream
  • Scoop
Instructions
  1. Place one scoop of ice cream on a cookie.
  2. Lay another cookie on top and smush down to form a sandwich.
  3. Place on wax paper and then refreeze them until ready to serve.

Ooey Gooey Toasted SMores Bars

Is there ever really a time when SMores aren’t in order? I realize that it’s a camp-fire-y treat, and I realize that it’s nearing the end of January. I really don’t care. HA! These SMores Bars “mayyyy” be the best thing I’ve ever put in my mouth.

Since I believe that S’mores never actually GO into retirement at any given time during the year, these happened. Please forgive me while I woo these bars in my kitchen. Woo them right smack dab into my mouth. And with a cold glass of milk to boot.

This is SUCH a simple dessert to make. You won’t believe how easy it is. These toasted Smores bars are perfect for anytime and I hope you and yours enjoy them as much as – uhh – “me and ours?” do! That made sense, right?!

These ooey gooey SMores Bars are INSANELY easy to make and SO stinking delicious! It's the perfect S'mores dessert for at home on a weeknight or at your next family get together! www.sweetpenniesfromheaven.com

I recreated this recipe from Shelly at Cookies and Cups! She uses homemade marshmallow fluff in her recipe. I totally cheated, and used store bought marshmallow cream which is good in a pinch – but I imagine that the homemade is SO much better!

You’ll need the following ingredients…just remember that you can use store bought marshmallow cream like I did if you don’t have the ingredients or time to make the homemade fluff. The store bought fluff isn’t as pliable and spreadable as the homemade fluff is, so I ended up swirling the top of mine a bit, into the fudge layer, and then toasted it. Mmmm….Have Mercy!!!!

Crust
  • 2 cups graham cracker crumbs
  • ½ cup butter, melted
  • ¼ cup granulated sugar
  • ½ tsp salt
Fudge layer
  • 2 cups milk chocolate chips
  • 14 oz sweetened condensed milk
Fluff Layer
  • ¾ cup sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • ¼ tsp salt
  • 2 egg whites
  • ¼ tsp cream of tartar
  • 1½ tsp vanilla extract

Fluffernutter Rollups

Easy Kid-Approved Fluffernutter Rollups

I haven’t met a person that doesn’t love fluffernutters. If you’ve never had a fluffernutter sandwich OR fluffernutter rollups, then let me introduce you! There’s no need to be strangers, anymore!

Friends, meet peanut butter and marshmallow-y fluffy goodness. There. Now you’ve been introduced. I’m sure you’ll become best friends!

When I was little, it was something I made all the time. Peanut buttery fluffiness. Pure bliss, in my opinion! Paired with a ginormous glass of milk. Mmm’hmmmm. Since my kiddo lives and breathes anything peanut butter, we have a lot of peanut butter recipes on the blog! These are perfect for him as a quick snack or to pack in his school lunch. Best part? They’re SO easy to make!

fluffernutter rollups

Fluffernutter Rollups Ingredients:

2 pieces of white bread
1/8 cup of peanut butter
1/8 cup of marshmallow fluff

Instructions:

  1. Begin by rolling the bread flat with a rolling pin or something smooth. Roll it out pretty thin.
  2. Next, spread a thin layer of peanut butter.
  3. Then, spread a thin layer of marshmallow fluff on top.
  4. Roll up tight, and cut into small bite size pieces!
  5. Store in airtight containers so they don’t get stale.

Alright, now seriously…how easy is that?! It’s a game-changer in our kitchen. The kiddo loves when we make these and then naturally, momma has to have her ginormous and thick fluffernutter all to herself. With that cold glass of milk. Shhhh!!! If I keep it a secret, I don’t have to count those calories. 🙂

Do you or your kids love fluffernutters? If so…you’ll love these fluffernutter rollups!

Reese’s Peanut Butter Cup Bark Recipe

It’s time ya’ll. Christmas movies are playing ’round the clock at my house right now, and the candy and treat makin’ has begun. I’ve been working with The Hershey Company on a few fun things lately, including this Reese’s Peanut Butter Cup Bark recipe. They’re really working hard to help families and friends create #NewTraditions with their loved ones this year.

Since Hershey’s is a company that I consider – “ancestor approved” – I’ve got a nice stash of their products on the corner of my countertop to make all kinds of yummies.

We created a really fun video for our Reese’s Peanut Butter Cup Bark recipe. Just click to watch the video above!! We had entirely too much fun shooting it. Family and friends devoured the bark EACH time I made it. I’ve made quite a few batches already – and will be making more ahead for Christmas. We made it as a fun spin on our traditional chocolate covered peanut butter ball recipe.

Did you notice the cute Hershey’s plate at the end of the video? I actually bought that plate for my mom in 1996 when I was on my senior class trip! I bought it from Hershey PA – so it was definitely fitting for this post!

This Reese's Peanut Butter Cup Bark recipe is a fun twist on an old family classic holiday recipe. So easy and so delicious...only using 4 ingredients! It's the perfect no bake holiday recipe! www.sweetpenniesfromheaven.com Reese’s Peanut Butter Cup Bark Ingredients:

  • 11.5 oz bag of Hershey’s Milk Chocolate Chips
  • 10 oz bag of Reese’s Peanut Butter Chips
  • 12 oz bag of Reese’s Miniatures Peanut Butter Cups

Instructions:

Begin by unwrapping Reese’s Miniatures and chopping into chunks. Set aside for later.

Line a large baking sheet with parchment or wax paper.

Pour chocolate chips into a microwave safe bowl, and melt in microwave for 1 minute and 30 seconds on medium power. Stir. Continue microwaving in 15 second intervals, on medium and stirring until thoroughly melted.

Pour melted chocolate onto parchment paper and spread into a thin layer.

Pour peanut butter chips into a microwave safe bowl, and melt in microwave for 1 minute and 30 seconds on medium power level. Stir. Continue microwaving in 15 second intervals, on medium power level and stirring until thoroghly melted. About halfway through melting, add 1 tablespoon of shortening to thin out the texture.

Immediately spoon dollops of the melted peanut butter chips onto the chocolate. Use as much or as little as you like, depending on your preference. You may have some melted peanut butter left over.

Using a skewer, toothpick, or knife, begin marbling the mixture using a circular or swirling motion until you get the desired effect.

Place chopped Reese’s Miniatures on top and press into the mixture, using your hand.

Place the baking sheet into the fridge to allow the bark to chill for 1-2 hours or overnight. Once it’s set, break into large chunks and serve! Store leftovers in an airtight container.

Pineapple and Brown Sugar Glazed Pork Tenderloin

A delish glazed ham is usually always on our menu each Christmas. It’s just a family favorite, but I just made this pineapple and brown sugar glazed pork tenderloin, and man……oh man. We always have so much leftover ham – so I think it’s super smart and easier on the wallet – to prepare this dish instead!

I grabbed this Smithfield All Natural Pork Tenderloin at Walmart the other day, fully intending on doing a pork BBQ recipe. Then I strolled upon a can of pineapple rings in my cabinet and thought, hmmm….that would be SO good on that pork tenderloin — and that’s exactly what I did!

Ingredients:

  • 2 lb. pork tenderloin (we use Smithfield All Natural)
  • 1 can of pineapple rings, in juice
  • 1/2 cup packed brown sugar
  • 1/4 cup honey
  • 1 tablespoon spicy brown mustard
  • 3-4 tablespoons pineapple juice (reserved from can)
  • salt and pepper to taste

Instructions:

Preheat oven to 375

Salt and pepper the entire pork tenderloin

In an oven proof skillet, sear pork tenderloin in oil, on all sides till browned. (On med. high heat)

Transfer skillet with pork tenderloin to the oven and continue to cook an additional 30-40 minutes or until meat thermometer reads 150 degrees when inserted into the fattest part of the meat.

After tenderloin is in the oven, mix brown sugar, honey, mustard and pineapple juice in a small bowl, and set aside.

When the tenderloin has just 2-5 minutes left of cook time, take it out of oven and brush on some of the glaze. (Be sure to reserve some glaze for the pineapples). Turn on the broiler, and bake an additional 2-5 minutes or until the glaze starts to bubble and carmelize.

Remove from the oven, and cover lightly with aluminum foil. Let rest for 10-15 minutes before carving.

While that’s resting, drain pineapple rings and place on a cookie sheet. Brush on some glaze and pop into the oven while the broiler is still on. Let broil for 2-5 minutes or until the glaze begins to bubble and/or brown. Remove from oven. Watch closely – so they don’t burn!

We placed a pineapple ring in between each slice, and then drizzled on a little more glaze to the top. So sooo yummy!! We had some leftovers, and the next day we stuck these little slices of heaven into some soft slider buns and had the perfect lunch!

Maple and Brown Sugar Glazed Pork Chops

I love love love maple and brown sugar — and I’m not talking about just oatmeal here. That flavor combo just rocks my world. Have you ever had maple and brown sugar glazed pork chops?! OMGeee! The glaze has a bit of brown mustard in it too, and that zing with the sweetness makes for a crazy awesome tasting pork chop!

Maple and brown sugar is a fun fall flavor – and we’ve been trying some new recipes around the house lately. I’m trying to pull myself out of the “recipe rut” that I fall down into every once in awhile! My husband tries to show me up in the kitchen – but I totally rocked his world with these pork chops! Here’s the recipe…

Ingredients:

  • 4-6 thick pork chops (we use Smithfield All Natural pork chops)
  • 1/2 cup maple syrup
  • 1/4 cup packed brown sugar
  • 1 tablespoon of brown spicy mustard
  • salt and pepper to taste
  • any other favorite seasonings (optional)

Instructions:

1. Preheat oven to 350 degrees.

2. Prepare the glaze by mixing the maple syrup, brown sugar and mustard together in a small bowl until combined well, and set aside.

3. Season pork chops with salt, pepper, or any other favorite seasonings you like to use. We used another favorite pork/chicken seasoning we like too. Fry in a skillet in oil, on medium high heat around 4-5 minutes on each side.

4. Take the skillet off the burner and brush the glaze on each side of the pork chops. Don’t be shy with the glaze. Make sure to brush it on nice and heavy!

5. Finish cooking the pork chops through in the oven, in an oven-safe dish.

6. When the chops have just a couple of minutes left to cook, turn the broiler on to let that glaze thicken and caramelize a bit.

7. Serve and enjoy!

4 Simple Seasonal Coffee Recipes:

It’s mid November and I’m still in pumpkin spice heaven. However, I made a peppermint dessert the other day and now I’m all over the peppermint. We’ve had several really awesome seasonal coffee recipes on the blog, so I wanted to lump them together here so you could find them all in one spot, and enjoy them. These seasonal coffee recipes are SO easy to make…bada bing, bada boom! Just click the links below to go to that particular coffee recipe. Each of these recipes are in the photo above.

  • Peanut Butter and Chocolate (Buckeye) Frozen Coffee
  • Peppermint Mocha Frappe
  • Pumpkin Spice Frappe
  • Maple Frappe

New Folgers Perfect Measures Coffee Those recipes are super simple already, but now they’re even EASIER to make with Folgers Perfect Measures! Have you found these at your store yet? Oh. My. Goodness! I love when things make my life easier, especially in the mornings – and especially on mornings that I love my coffee more than my husband.

My husband…bless his heart. I soooo wanted to poke him in the eye the other morning. Long story, short. He makes our coffee each and every morning. THIS particular morning, he started the coffee but forgot to put the pot back into the coffee maker.

Yeah.

He goes out to start the car and let it warm up, and the river of coffee just ran and ran and rannnn. So – he comes in to find the dogs getting their caffeine fix off the kitchen floor. Ughh. The reason I wanted to poke him in the eye is because that coffee actually stained one of my freshly painted PRETTY WHITE cabinet doors. {Eye poke, eye poke, eye poke!!!}.

coffee-stain-on-cabinet

The husband has since been forgiven. I do love him more than coffee and cabinet doors anyway. Sigh. Anyhoo, let me tell you more about these Folgers Perfect Measures……..

new-folgers-perfect-measures-coffee-3 Folgers made these awesome little pre-measured circle portions that you just drop into the filter of your automatic drip coffee maker! Right now, Folgers Perfect Measures are only available in limited markets – St. Louis, Kansas City, and Indianapolis. If you’re in St. Louis, you can find them at Schnucks & Sam’s Club. In Kansas City, you’ll find them at Target & CVS and in Indianapolis, you’ll find them at Kroger and Marsh — so keep an eye out!

6 Reasons You’ll Love the New Folgers Perfect Measures:

1. Easy to Personalize Your Coffee Experience

If you’re like my husband and I, you may drink your coffee a little stronger or weaker than the other. My husband likes his VERY strong. I like for my coffee to put a little LESS hair on my chest. Ahem. With Folgers Perfect Measures, you can easily personalize your own coffee!

2. Makes Mornings Simple

Instead of fumbling around in the morning, trying to measure out your coffee…just plop the Folgers Perfect Measures portions into your filter and go. Run and shower, get dressed and coffee is ready to go! Hopefully you remember to put the coffee pot back into the coffee maker. {wink}

3. 5 Different Flavors to Choose From

There’s a flavor for everyone! They offer 100% Columbian, Breakfast Blend, Classic Roast, Classic Decaf, and Black Silk.

4. Consistent Coffee Every Time

More husband bashing here…  My husband is awful about not putting the coffee scoop back into the canister, so I have to find something else to scoop out the coffee. Most times, I never get it “just right” so my coffee is either too weak or too strong. With the Perfect Measures, you get it right…EVERY single time!

5. No Measuring – No Mess

No more dried coffee grounds all over the counter. Need I say more?

new-folgers-perfect-measures-coffee-5

6. Same Great Folgers Taste

The Folgers Perfect Measures is still the same Folgers flavor you love! Nothing different about the taste/flavor! We drink the Breakfast Blend and the Black Silk varieties. They’re soooo good! If the new Folgers Perfect Measures are available in your neck of the woods, give them a try and see how simple they are to use. Makes mornings SO much easier, and less messier!
