Salad Prep Ideas for Lazy Meal Preppers

Meal prepping is something that I love to do, but I honestly never always take the time to actually DO it. So, I’m one of the “lazy” meal preppers. How ’bout you?

I’d love to say that I spend hours in the kitchen on the weekend, prepping and chopping away. But nope. That’s not the case. Especially in the summer.

I was tickled to death that Rubbermaid kindly sent me a package of their new Rubbermaid BRILLIANCE products to try. I knew instantly – these were going to be used for my salad ingredients because I love how they stack! Tons of room saved in my fridge AND they never leak! BONUS!!!!!

I wanted to share a few Salad Prep tips for the lazy meal prepper! Since I’m the lazy meal prepper…I’m kind of a pro at this, haha!!!

Salad Prep Tips:

1 – Instantly wash your produce when you bring your groceries inside. This is huge for me. Why? Because if I don’t do it right away…I tend to let the produce spoil because later on, I don’t want to take the time to wash it.

2 – Chop up your veggies really quickly after you’ve washed them. This will save you SO much time later on when you’re ready to cook or prepare your salad. PLUS, you’ll be more apt to actually EAT your salads if your veggies are cut and ready to go!

3 – Use Rubbermaid containers like – Rubbermaid BRILLIANCE to store your salad ingredients in! This is the perfect set because of the size of each container. They stack SO nicely in the fridge and save a lot of space. I love the latches on these and that they’re super airtight too so they won’t leak!

They’re crystal clear, which I love, because they look like glass! They’re also stain resistant! They’ll always look new. I just hate it when you put something like spaghetti sauce in a plastic container, and then it stains orange! Don’t you?! Bleck!

One other reason that I love the Rubbermaid BRILLIANCE is because they’re splatter-resistant in the microwave! You can microwave anything in them, with the latches open and lid on! Makes keeping the microwave nice and clean!!

Guess what?!?! I see fresh GREEN grass out my window! I’ve also caught a glimpse of some Easter lillies popping up and on the not so pretty note, the birds have started their poo fest on our vehicles. That means it’s official. SPRING is here! Now, forget I mentioned bird poo — cause this post is about food. Ahem. Moving along…..

I crave salad all year long. I blame that on the fact that I don’t drink enough water, but anyhooo…when spring comes I’m ready to ditch the heavy and hearty meals from the winter and go with light and fresh. Salads are my favorite thing to enjoy but I love playing around and coming up with new ideas.

 

Crispy Onion Ring Topped Garden Salad

Have you ever had crispy onion rings on top of a fresh garden salad?! Wellll, let me just tell you….it is crazy good. I usually put sliced onions on my salad, and croutons. But this kind of knocked out 2 birds with one stone. There I am….talking about  birds again. Gahh! But you get the onions and you get the crunch. I don’t think I can ever have a salad without onion rings again. Seriously. It’s THAT good.

Below is what I used but the next time, I’ll be changing it up again and adding some fresh crumbled feta cheese, grilled chicken and sliced hard boiled eggs. Oh Em Gee. That’s the wonderful thing about a homemade salad…you can do it any old way you like! Just don’t forget the Alexia Crispy Onion Rings on top ya’ll!

Ingredients
  • Salad greens
  • baby carrots
  • grape tomatoes
  • cucumbers
  • shredded cheese (any kind you like)
  • salad dressing (any kind you like)
  • baked crispy Alexia onion rings (3-5 rings for a single salad)
Instructions
  1. Combine all of the ingredients in a salad bowl and top with crispy baked onion rings and dressing. Bake the onion rings according to the package directions. Enjoy!

We grabbed some Alexia crinkle cut fries for the husband and little man, sweet potato fries for me and then the crispy onion rings were just a toss up. Usually my husband and I fight over those. Like, I steal them off the baking sheet while his head’s turned. (oops!)

I love the Alexia onion rings because they’re breaded with panko. Heckkkkk yeahhhh baby!!! You know what that means?! Super crunchy! All of the Alexia products are made with natural ingredients. You can tell a difference. Their fries are so fresh and taste like you cut them yourself and roasted them in the oven. Their motto is “Farm to Flavor!”

We found our Alexia fries and onion rings at Walmart, in the freezer section. Just look for the “Potatoes” signage in the freezer aisle to locate them. Load them in your cart and take them home. You wanna know something? I try to get my kid to eat whole grains – but I won’t hardly eat them myself. I love whole grain cereals, but bread is a whole ‘nother ballgame. I just can’t do it. Unless I toast it….yeah, I can sorta eat whole grain bread toasted. Otherwise, I feel like I’m chewing on a cereal box.

So…I try to get my whole grains in other forms like the cereals but then I found out that Suddenly Salad (love their bacon/ranch pasta salad. Mmmm.) came out with – wait for it…

The new Suddenly Grain Salad™ mixes! Yes’sireee. And omgeee. They’re GOOD!!! I love the taste, texture, and the way it looks. It just looks pretty to me, and I love to eat pretty food! The new Suddenly Grain Salad™  mixes have blends like brown rice, wild rice, quinoa and then they’re dolled up with herbs and spices in a boil-in-a-bag for easy cooking! They also have dried fruit (YUM), vegetables and/or nut mix-ins along with a dressing packet to top the whole thing off!

We were sent 3 different varieties to try and we tried the Harvest Grains one first. The Southwest Grains and the Tuscan Grains are still in my cabinet, but I’m telling you – if they’re as good as this Harvest Grains one, then I’m ALLLLLL in!!!! I’m in love with this stuff. The Harvest Grain variety includes yummy dried cranberries and almonds.

Dale isn’t much of a rice man, so that’s just fine. I get to keep it all to myself. I made it for lunch, and had plenty with some leftover for the next day too. But these are perfect to incorporate into your main dish or as a side dish for a quick weeknight meal.
