Super Easy and Low Fat Pumpkin Muffins recipe
Okay so guys…this treat is SO crazy good that I had to share it with you!! These Pumpkin Muffins are so moist and delicious that you will not believe there are only 2 ingredients. Cake mix and a can of pumpkin! That’s IT! I’ve been trying to take some of my favorite foods (I have a major sweet tooth) and transforming them into a healthier version.
I’ve had these muffins before and actually shared a recipe post once, like 2 or 3 years ago about them. With fall here, I’ve stocked up on canned pumpkin and wanted to make these again. They turned out so great, so I snapped a few photos and figured I’d write up another post with updated pics.
I used a spice cake mix so I guess you could say these are actually a Pumpkin Spice Muffin…either way, it’s crazy good. Even the kiddo liked them. The pan was gone in NO time flat! Here’s how you make them. No oil or eggs!!!
Pumpkin Muffins Ingredients (there’s only 2!)
Directions:
In a large mixing bowl, mix the cake mix and 15 oz. canned pumpkin until completely combined. The batter will be thick and clumpy. Try to get as many lumps out as you can, but do NOT add any liquids like water, oil or milk!! That would defeat the purpose!
Add cupcake liners to a muffin pan. Batter should make 12 muffins. Fill each cupcake liner about half to 3/4 of the way full. Bake at the temperature that the cake mix box directions recommends for 19-22 minutes. After timer goes off, check to see if they’re done by sticking a toothpick into the center of a muffin. If it comes out clean, you’re good to go. If it’s still gooey, stick back in the oven for a couple more minutes. If you prefer a printable version of this recipe, just grab it from below!
- Box of Spiced Cake Mix
- 15 oz. canned pumpkin

- Fill each cupcake liner about 1/2 to 3/4 full.
- Bake at the temperature the cake mix directions recommends for 19-22 minutes.
- Insert toothpick in the center, if it comes out clean they’re done. If not, bake for an additional 2-4 minutes.
