Bacon Wrapped Parmesan Crackers

Everybody needs a little bacon in their life, right?! My neice introduced me to these bacon wrapped parmesan crackers a few years ago. Actually, her mother in law made them all the time and every chance I got – I’d swine a handful or two. Or three. They were always THE appetizer of all the family gatherings and since it’s New Year’s Eve I figured what the heck. I’ll make up a batch. They’re way too good not to share.

So I’m sharing the love.

And the fat.

And the calories.

P.S. The printable recipe is further down below if you’d like to print it off to stick in your recipe box. Now…..after I write this up, I have to go swat my husband’s hand out of these before they’re all gone!!!

 

Ingredients:

  • buttery crackers, we used Ritz
  • package of thin sliced bacon
  • parmesan cheese

 

Directions:

Lay crackers out on a baking rack that has slits in it, to allow bacon grease to drip. We used a broiler pan. You can use a cooling rack on top of a regular cookie sheet if needed. Just make sure the grease has something to drip on while in the oven.

Dump a teaspoon of parmesan cheese over each cracker. Some will fall off, that’s okay.

Slice bacon in half, right down the middle of the package.

Now’s the tricky part. Peel off a slice of bacon, then carefully pick up a cracker making sure not to lose too much cheese off the top. Just lay the bacon across the top of the cheese and wrap each end around the backside of the cracker. The ends of the bacon should meet. Just snugly press the ends together and then lay back down on the baking sheet.

Bake in a 250 degree pre-heated oven, for 2 hours. Take a peek around 1 hour and 45 minutes though to see if they’re done. Depending on how thin the bacon is, they could be done a little sooner.

DO NOT use thick sliced bacon. The end result is still okay, but they turn out more chewy than crisp.

Caprese Bites – A healthier appetizer or snack!

Caprese. Such a fancy word. I always lick my chops though when I see “caprese” recipes on Pinterest. Mozzarella, tomato, and basil. YUM! I didn’t know though, that this recipe was made to resemble the Italian flag (red, green and white), did you?

I’m all about easy recipes and I love appetizers – especially during “game day” season! I really love that this is a healthier appetizer. Although chunks of cheese are involved, it’s still not laden with grease and meat and cheese. Ohh, shoot. I forgot it is laden with cheese. Oh well. Carry on! These caprese bites are seriously so good you guys, I could not stop eating them! Sigh.

Ingredients:

  • fresh mozzarella cheese, cubed
  • fresh basil leaves
  • cherry tomatoes
  • toasted baguette, sliced
  • balsamic vinaigrette or vinegar (whichever you like)
  • toothpicks

 

Directions:

  • Use day old crusty bread, if you have some on hand. Otherwise, toast a french baguette or something similar and slice. Then cut each slice in half or in 1/4 so they’re actually “bite size”.
  • Fold a basil leaf and place on top of the bread.
  • Then add a chunk of fresh mozzarella (big enough to sit nicely on the leaf/bread).
  • Add a cherry tomato on top.
  • Skewer a wooden toothpick through to hold together.
  • Drizzle a bit with some balsamic vinegar.
  • Then INHALE these babies!!

The 4th is right around the corner and we’re planning a little get together with my family, and allllll the kids. More than likely the day will be spent IN the swimming pool or playing cornhole (I’m the queen of cornhole, just so ya know!). My husband will be manning the grill and I’ll be the one stuck inside preparing drinks and dessert. I won’t mind that part though, esp. if it’s super duper hot out. Humidity and I are not friends.

Fun party decorations and good food is a huge part of our 4th of July parties, but we tend to need ideas for dessert. I’ve made the same desserts over and over and over again, for YEARS. I decided to peek around the awesome www and found some fantastic ideas! I’m really crushing on all of these and not sure just yet which ones I’ll make. Notice I said, “Ones”. That means I’ll be doing more than one. Tehehheee.

Baked Mac and Cheese Recipe

When my husband and I were dating, I thought I’d be romantic and cook for him. I call him up one day and ask what his favorite meal is because I was gonna go ALL out and try to woo him. So, here’s the conversation as I remember it…

Me: So, I thought I’d cook you dinner tonight. What’s your favorite meal?

Him: Ummm….chili dogs and mac and cheese!

Me: Really? No steak and potatoes?! (thinking candlelight dinner here)

Him: Nahh. I like chili dogs.

Me: Mmm….ohhh-kayy. (candlelight dinner looking less romantic)

Him: Yeah, that’s my fave!

Me: Okay. I was thinking a romantic dinner with steak or something.

Him: Chili dogs and mac and cheese can’t be romantic??????

Me: Uhh, I guess so?!

So – yeah. Chili dogs and mac and cheese was the first {romantic = eye roll} meal I made for him. I guess I shouldn’t complain. His favorite meal is an easy one! Over the years, we took it a step further and started making a homemade baked mac and cheese version. We never looked back!

Although I still think steak is more along the lines of a romantic dinner…but what the heck do I know!

Baked mac and cheese is the comfort food of ALL  comfort food. Comfort in it’s truest form, right?! Cheesy, gooey, and full of carb-y yum! I love making this because there are always leftovers and it’s the perfect dish for pitch ins – summer OR winter. Who doesn’t love mac and cheese ANY time?!

 

This recipe is on our menu plan about twice a month. My husband would love to have it more often than that!

This recipe is so easy to make too! I’ve included a printable recipe further down below in case you’d like to print and stick back in your recipe box! I hope you enjoy it as much as we do.

INGREDIENTS
1 lb Macaroni
2 (8 oz) Packages of Sharp Cheddar Cheese Chunk
2 cups Milk
1/2 cup Flour
1/4 cup Butter
Salt & Pepper to Taste

 

DIRECTIONS

baked mac and cheeseIn a large pot boil macaroni until tender. I like this pasta pot with strainer!!

In a small saucepan melt butter over medium heat.

baked mac and cheeseAdd flour and mix until brown amber color (Make a roux).
Add milk and whisk until thick.

Mix until cheese is all melted and smooth.
Place cooked macaroni in baking pan.

Bake for 30 minutes in a 350 degree oven
Salt & pepper to taste.

Planning a tailgating party soon? This Slow Cooker Pulled Pork Sliders recipe is perfect for your football fans. It’s really easy to make and one that I know your family will enjoy just as much as mine does. I mean, pulled pork sliders and tailgating go hand in hand, right?!

This recipe is actually one that I got from eMeals. I use eMeals all the time! They save me so much time and money. When I found out that Dave Ramsey recommends it, I was very interested and now I know why! Dave is KING of teaching how to save money and become debt free. eMeals is definitely a tool to help with the grocery budget!

Long story short, eMeals is a meal planning subscription service. You sign up and they send you weekly meal plans and recipes, along with a full grocery list for your items. You can choose what store you shop at (I chose Walmart) and they’ll even send you prices along with your grocery list. It really cuts down on my grocery bill plus we’re always having something NEW and I never get stuck in a meal planning rut! I LOVE it!! I’m really good about sticking to my grocery list it sends me.


Okay, enough about all of that…you’re here for the recipe, right? Here it is:

Ingredients:

6 lb bone-in pork should roast, trimmed
2 teaspoons salt, 2 teaspoons pepper
18 oz bottle barbecue sauce
1/2 cup chicken broth
2 tablespoons apple cider vinegar
2 (12-count) packages slider buns
16 oz jar bread and butter pickles

Directions:

Sprinkle roast with salt and pepper.
Combine roast, barbecue sauce, broth and vinegar in a 5- to 7-quart slow cooker.
Cover and cook on Low 8 hours or until roast is very tender.
Remove pork to a cutting board; shred with 2 forks.
Return pork to slow cooker, and discard bones.
Toss pork to coat with sauce; serve on slider buns with pickles and enjoy!
