Easy Peasy Chocolate Eclair Recipe!!
One of our family favorite desserts is Chocolate Eclair. My sister used to fix this for every holiday and then some how the job got turned over to me each year. We make it for Easter, Thanksgiving, Christmas and any other time we get a chance to! It’s super easy to put together and it’s a hit every time. I rarely have much leftover to take home. I’ve made it so much that I could make it in my sleep.
I wanted to share this fun Easter “version” of the Chocolate Eclair. It’s really the same thing – just with Peeps ;). It makes it a little more festive to add them on top. In this recipe, I also used peanut butter. I don’t usually do that but we wanted to try something a little different than the norm. This is the base layer of graham crackers for your eclair. I leave them whole except for the ends of the row. I usually have to break a whole cracker in half to get it to fit. It really depends on the exact size container you’re using.
This is the pudding mixture. I like using this kind of bowl with the spout because it pours easily.
Pour half of the pudding mixture on top of the first layer of graham crackers and spread evenly.
This is the 2nd layer of graham crackers. After the second layer is added, add the remaining pudding mixture on top of that and then add one last layer of graham crackers to the very top. Your icing will go on top of that.
