Monster Cookies are a family favorite treat at our house! They’re the most perfect flavor and texture combo on the planet!

With Spring on the horizon, I wanted to share this fun little gem of a recipe with you. I also wanted to share this fun Eggland’s Best Foodtography contest with you — but first thing’s first! Below is the yummy Monster Cookies recipe!

INGREDIENTS
3 Eggland’s Best Eggs
1 1/4 cup Brown Sugar
1 cup Sugar
12 oz Peanut Butter
1/2 cup softened Butter
1/2 tsp Salt
1/2 tsp Vanilla
1 1/2 cup M&M’s
1 cup Semi Sweet Chocolate Chips
2 tsp Baking Soda
4 1/2 cup Quick Oats

DIRECTIONS
Preheat the oven to 350.
Line cookie sheets with parchment paper.
Combine eggs, vanilla, salt, sugar, brown sugar and baking soda in a large bowl.
Add in peanut butter, and butter. Mix until well incorporated.
Stir in the M&M’s, chocolate chips and oatmeal.
Place about tablespoon size chunks on the prepared sheets several inches apart.
Bake for about 9 minutes.
Leave on cookie sheet for about 3 minutes before moving to rack to cool completely.

There are so many awesome things about summer! HERSHEY’S is ready to open our eyes to the everyday joys that surround us!

This summer, HERSHEY’S is pushing forward their “Hello Happy Moments” – to show us that we can choose happiness anywhere, and at anytime. It’s the simple things that can make us happy…like chocolate, and FISHING! An evening spent at the lake fishing, or chocolate?! I can’t just pick one, so I’ll take both!

Today is the first official day of summer – and we’re ready to create happy memories this summer, beginning with these delicious chocolate stuffed peanut butter cookies!

 

Chocolate Stuffed Peanut Butter Cookies

Chocolate Stuffed Peanut Butter Cookies Ingredients:

  • 32-35 HERSHEY’S KISSES Brand Milk Chocolates
  • 1/2 cup shortening
  • 3/4 cup Creamy Peanut Butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup additional granulated sugar for rolling (optional)
  • HERSHEY’S Milk Chocolate Chips melted, for drizzling on top (optional)

Instructions:

Makes about 2 and a half dozen cookies.

Heat oven to 375°F.

 

Chocolate Stuffed Peanut Butter Cookies

Remove wrappers from chocolates.

Beat shortening and peanut butter in mixing bowl until well blended.

Add 1/3 cup sugar and the brown sugar, beat until fluffy.

Add egg, milk, and vanilla; beat well.

Stir together flour, baking soda, and salt; gradually beat into peanut butter mixture.

Scoop out cookie dough, using a cookie scoop.

 

Chocolate Stuffed Peanut Butter Cookies

Press your thumb into the center of the cookie dough; set a HERSHEY’S KISSES Brand Milk Chocolate into the center.

 

Chocolate Stuffed Peanut Butter Cookies

Wrap dough over the chocolate, and roll into a ball.

Roll in granulated sugar, place on cookie sheet.

Bake 8-10 minutes or until lightly browned.

We’re seriously getting into like, the most dangerous time of the year for me. As soon as fall comes around – so comes my love for cute treat makin’. Like — how stinkin’ cute are these mummy oreos?! It’s seriously just a downhill spiral for me, till after New Years, anyway. You feelin’ me? I mean guys, I get out. of. control.

Fun Halloween treats always remind me of my grandma. She loved passing out popcorn balls to the trick-or-treaters every year. I have to admit that I love the memory more than the actual popcorn balls. I was never a fan of the annual popcorn ball.

Holy pumpkin overload, Batman!

My feed was slap full of pumpkin recipes. I mean, I love pumpkin spice anything just as much as the next guy – but it was caaa-rayyyy-zeeee. Kinda makes me feel guilty that I just added this pumpkin pie baked oatmeal recipe to the world of everything pumpkin – but, oh well.

I’m sure that you guys that saw it already were thinking, “Great….more pumpkin. Ugh.”

So, now THIS mummy oreos recipe is so stinking fun for Halloween and couldn’t be any easier. Let the kiddos muck & gom in the kitchen with ya! They’re fun to make and I know that your kids, their friends and everyone else will “Ooohhh and ahhhhhh” over them! Cause they’re just SO dang cute!

Here’s what you need:

Ingredients & Supplies

  • White Candy Melts
  • Oreos
  • Candy Eyes
  • Parchment paper
  • White Frosting (I used Betty Crocker white frosting that came with the different decorating tips)*
  • Drawing tip*
  • Icing Bag*

*If you do not get the frosting that comes with the attached tips, you will need to have a drawing tip and icing bag.

Instructions:

  1. In a bowl, melt the white candy melts according to the package instructions.
  2. Lay out a piece of parchment paper on your counter.  Parchment paper is an important supply!  Once the Oreos are covered with the white candy coating, they will not stick to the parchment paper.  
  3. Once the candy is melted, dip an Oreo and cover completely.  Use a spoon or knife to help even out that coating.
  4. Add two candy eyes before the coating hardens.  
  5. Using the drawing tip on your icing, create icing lines across the Oreo.
  6. Continue until your mummy has the desired effect.  
  7. Let sit until slightly hardened.  Use a knife to trace around the cookie to trim off any excess icing.  Continue to let harden or place in the freezer for a few minutes until frosting is completely set.

Lemon Cake Mix Cookies. Make Them Now and Thank Me Later!

Easy Peasy Lemon Squeezy - Lemon Cake Mix Cookies (cheater recipe!)

We’re a week into summer break and my attempt at losing a few pounds the last couple of months has come to a screeching halt. These lemon cake mix cookies are partially to blame.

Cookies.

Lemon cookies.

Do I even have to say another word?

Okay. I’ll say a few more words. MAKE THESE. Now. You won’t regret it.

If you love the flavor of lemon and you love “chewy in the middle and crunchy around the edge” cookies then you’ll wanna kiss my face for this recipe! I hope you enjoy it as much as we do! The printable recipe is near the bottom of the post, for your convenience. Awww, aren’t I too kind?! Print this baby out and put back in your recipe box.

Easy Peasy Lemon Squeezy - Lemon Cake Mix Cookies (cheater recipe!)

Lemon Cake Mix Cookies Ingredients:

1 box Lemon Cake Mix
2 Eggs
1/2 cup of melted Butter
6 oz Nestle Springtime Morsels (optional, but pretty!)

 

 

Easy Peasy Lemon Squeezy - Lemon Cake Mix Cookies (cheater recipe!)

How to sling these Lemon Cake Mix Cookies together:

Preheat oven to 350.
Line cookie sheet with parchment paper.
I remove dark semi sweet morsels leaving only pink and yellow.
Combine butter, eggs and cake mix.
Stir until just blended.
Stir in morsels.
Form into roughly tablespoon size balls and place on baking sheet.
Bake for 12 minutes or until cookie set.
Allow to cool several minutes on pan before moving to cooling rack.
