We’re a week into summer break and my attempt at losing a few pounds the last couple of months has come to a screeching halt. These lemon cake mix cookies are partially to blame.
Cookies.
Lemon cookies.

Lemon Cake Mix Cookies Ingredients:
1 box Lemon Cake Mix
2 Eggs
1/2 cup of melted Butter
6 oz Nestle Springtime Morsels (optional, but pretty!)
How to sling these Lemon Cake Mix Cookies together:
Preheat oven to 350.
Line cookie sheet with parchment paper.
I remove dark semi sweet morsels leaving only pink and yellow.
Combine butter, eggs and cake mix.
Stir until just blended.
Stir in morsels.
Form into roughly tablespoon size balls and place on baking sheet.
Bake for 12 minutes or until cookie set.
Allow to cool several minutes on pan before moving to cooling rack.

Have you tried it using other flavors of cake mix?
Yes, we used a white cake mix to make sugar cookies before too. One reader had mentioned in that post that they had used a chocolate cake mix and then sprinkled powdered sugar on top. YUM!
