Easy Low Fat Spiced Pumpkin Muffins Recipe (2 Ingredients) No Oil or Eggs

You won't believe how delicious and moist these muffins are! Super low fat too!

  • Box of Spiced Cake Mix
  • 15 oz. canned pumpkin
  1. Combine cake mix and pumpkin in a large mixing bowl. Stir until completely blended. (Batter will be thick and clumpy. Try to get as many lumps out as you can, but do NOT add any liquids like water or oil.
  2. Add 12 cupcake liners to a muffin pan.
  3. Fill each cupcake liner about ½ to ¾ full.
  4. Bake at the temperature the cake mix directions recommends for 19-22 minutes.
  5. Insert toothpick in the center, if it comes out clean they're done. If not, bake for an additional 2-4 minutes.
